Hi people ! I was away from AoS for some time and now I'm thinking it might be the best time to come back. I was just wondering how the whole army-building worked out now. I've heard disturbing rumours than Chaos was now split in two wide factions (mortals and daemons) and I was a little bit worried because the idea of having a chaos undivided army was what sold AoS to me. Is it true ?

No idea where you heard the rumour from, but chaos has always been more or less split into daemons, mortals and skaven. Those are further split into various subfactions, mostly based on the patron god. Army building restrictions only apply to matched play.
If you are going to play matched play, you are basically limited to one of the grand alliances, in your case you want to play Chaos. Fortunately for you, if you are planning on playing chaos undivided with a mix of mortals and daemons and representatives of all the chaos gods, you can still do that an play a chaos allegiance army. All you need is a leader choice and 2-4 battleline unit choices depending on the point size you are playing. You can even mix in skaven and chaos dwarfs for good measure and get some ranged artillery.
There's also some limitations on the number of behemoths (monsters) and artillery (warmachines) that you can bring in your army depending on the points size.

The best way to look at it is actually right at GW's site. If you go to Games Workshop then click on the Age of Sigmar tab, you'll see everything split into the 4 Grand Alliances. From there, everything can be narrowed down into Allegiances, but don't worry you can build however you like even in matched play if you stay within your Alliance.

I dig how in a setting where giant, muscled fungus men ride Mad Max cars and use their own teeth as currency, the concept of little engineering dudes with beards was considered a step too far down the aisle of silliness. ADB |

I'd strongly recommend picking up the General's Handbook. It's not explicitly required to play, but with since most meta use Matched Play almost exclusively, it more or less is. It's a cheap buy, though, and has lots of good information on all three methods of play along with points values for all armies and some interesting scenarios.

Unless your faction has a specific army book, then you are just fine being a general allegence to chaos. The only subfactions with books is Blood Bound, Clan Pestilens, and Everchosen. They may have specific benefits for being of one sub faction, but otherwise you don't miss out on anything

The three you listed don't have any special benefits from their allegiance. For those, you need to play Sylvaneth, Bonesplitterz or Beastclaw Raiders.

Yup. If you want special allegiance abilities, you can choose from...
CHAOS: no options
DEATH: no options
DESTRUCTION: Bonesplitterz, Beastclaw Raiders
ORDER: Sylvaneth
Other than those three armies, the only reason to worry about your allegiance is that it might impact which units count as Battleline. If you're planning on taking units that are always Battleline, allegiance makes no real difference at all.
