My 67 year-old dad bought himself an X-Box One recently to keep amused, and he's having some trouble getting used to the dual joystick control scheme used in most games. He was an occasional gamer back in the dark ages, but mostly on PCs, though I believe he still plays CounterStrike (against bots) every now and then. We got him a bunch of games for Christmas, but I'm not much of a console gamer, so I pretty much went down the list of the best-rated/highest-selling games (Madden, Battlefield 1, Rocket League, etc.), but all those aside from Madden seem to require a bit too much twitch skill with the controller for him to get the hang of at his present level of mastery over it, and "practicing" to play video games is something I know he won't do.
So basically I'm wondering if anyone has any suggestions for Xbone games that aren't too controller-intensive but still fun.

Plants v Zombies: Garden Warfare 2 might be his speed.
It's fun, there's a mode for playing against bots, and the controller work isn't too crazy for requirements of fine control.

Perhaps look into some kind of strategy/turn-based game, those are more about your ability to think and plan rather than requiring you to be good/quick with a controller. Not sure how many games there are like than on Xbox One at the moment but I imagine you could find something. There were a few on Xbox 360 that might be backwards compatible, you'd also be able to get some of those quite cheap.
I would suggest sticking with Rocket League for a bit, after a few games even a 'bad' or inexperienced gamer can get on well enough as the controls themselves are very simple and intuitive, and it's just enormous fun even when you're not the best at it (moreso than, say, an online shooter where until you're good you're going to just run 40 yards, get shot and repeat over and over).
There are a lot of quite cheap indie games that are pretty simple, tons of platformers and puzzle games that you can find on the Xbox Marketplace, I can't recommend any specifically as they're not really my thing, but I'm sure someone who's more into that sort of game can recommend some of the better ones.
Telltale story games might be worth a look, they're mostly just playing through a story selecting dialogue with the odd quick time event or puzzle, and there's a fair few out there now covering plenty of genres (Batman, The Walking Dead, Game of Thrones ect)

I would recommend XCOM:Enemy Unknown/Within and XCOM 2 (both from Firaxis). Turn-based strategy games, and he can make his children, nephews, wife, etc, to boot.
I don't own a XBox so cannot help you further, as I don't know which other games are available on XBox, but I enjoyed these games tremendously and, although I am in my 40s, fast moving games are a pain for me too, so maybe he fancies this.

Well I got my dad used to the controls playing Halo Reach, which should be downloadable from the store. You can tweak the settings on firefight missions to make him near invincible while he's figuring out the controls...

Valiant Hearts was a nice game. A simple side scroller puzzle game that takes place in WW1. It had a moving a story that captured the nature of the war, despite it's slightly childish ascetics.
Another one is Turing Test, it's a FPS puzzle game like Portal except instead of portals, you must move around colored batteries to activate various machinery. It's not fast paced so that might be good practice for the double joy stick layout.
