I just picked up a box of chaos knights to expand on the khorne bloodbound half of a starter set, but figuring it out what weapons they can use is confusing me a bit.

I equipped them exactly like the box art, I wanted glaives so I gave all the basic guys glaives. But I gave my commander and standard bearer a sword, and of course the horn blower doesn't have any weapon modeled.

Does this mean the commander and standard bearer count as using enscrolled weapons and the horn blower has no attacks? Or would they all just count as glaives?

The key is to look at the unit description. If it says something like "some units are armed with X, others are armed with y", it means the entire unit carries the same type of weapon. This is the case of the Chaos Knights. So in your case, every model is considered armed with a glaive.

Iirc that's true even if they are the horn blower or banner carrier.

To many unpainted models to count.

The FAQ clarified this to say that command models (leader, standard bearer, musician) count as having the same weapons as the rest of the unit even if they are not shown on the model. This is a bit of a holdover from WHFB that tends to confuse new AoS players since it isn't actually in the rules.

I chose an avatar I feel best represents the quality of my post history.

I try to view Warhammer as more of a toolbox with examples than fully complete games.
