Because new model. Needed new rules to suit the new stature and the setting.

GUO hasn't had a model update yet.

It's fully within the rules for me to look up your Facebook page, find out your dear Mother Gladys is single, take her on a lovely date, and tell you all the details of our hot, sweaty, animal sex during your psychic phase.
I mean, fifty bucks is on the line.
There's no rule that says I can't.

My guess is the following reasons: A) He's a bit cheaper (240vs 280). B) He's harder to get wounds out: (5+ save against ANY wound in addition to the regular one, making him a third more survivable than similar wound-count and save models) and C) He regenerates wounds, d3 per turn and, depending on what the FAQ has to say, his signature spell could also allow him to regenerate another d3 wounds per turn.

A Great Unclean One typically has more wounds because it can heal the way it does.

Because as of now the Bloodthirster is a more powerful model on the tabletop (though not the fluff). It has a bigger model, bigger base, bigger stats, etc. The LoC got a bit of a bump too when it got a larger kit. However, the GUO is still more resilient than the Bloodthirster by a huge margin. For starters thanks to its extra 'ward save' the GUO requires 15 wounds (after armor saves) to kill. It also heals every turn, and can heal more from casting its signature spell. Finally, it's on a 60mm round base which is much smaller than the large oval of the Bloodthirster's and makes the GUO less vulnerable in melee. Of course the Bloodthrister beats the snot of out the GUO in everything but resilience but that's kind-of how its supposed to be.

I try to view Warhammer as more of a toolbox with examples than fully complete games.

A lot of the AoS wounds characteristics are derived from model size, when a new GUO model arrives, it will be a significantly larger piece and the wounds will go up accordingly.
