My friends say no, so we roll on it every game, but I'd like a RAW answer.
Units like Roboute and the Primaris Captain have a gauntlet that has both a ranged and melee line in the codex.
If I fire the gauntlet in the shooting phase, then succeed a charge during the charge phase, can I use the gauntlet again in the fight phase, or do I need to use a different melee weapon?

Is there a reason your friend says no? The rules tell you to pick a weapon. The rules never tell you that you can't use the same weapon in both the shooting and fight phases. Necrons with Staves of Light can fire them in the shooting phase and then attack with them in melee.
This is basically a situation where you just need to point out the rules where it says you pick a weapon and then ask your friend to point out the rules that say you can't use the same weapon in two different phases. He won't be able to because the rules aren't in there.

Your friend is 100% wrong. Ask him to show where it says what he is claiming. Until then just refuse to play him. As Kriswall points out, the rules allow you to select the Melee profile for the weapon, and nothing prohibits it.

It would also make foot custodes only able to stand around and use letter openers or artificer armour slaps in the fight phase as they are all armed with shooting and melee weapons in one.
They would have needed an exception from this imagined rule to function and they don't have one so GW clearly intends you to be able to use the same weapon in different phases.

Well that didn't take long lol.
Yeah, they interpreted something in the shooting rules section of the Dark Imperium rule book that way, and in an effort to just keep the game moving we would roll on it. I'm pretty sure that section is saying each gun can only be fired once (unless otherwise stated) but it's not in front of me right now to get the exact text.
I figured common sense would mean they wouldn't put it there, with the (Melee) tag after it, if it wasn't meant to be used.

I think your friend has a bit of edition lag. 7th edition had a rule that prevented Necron Triarch Praetorians from using their Rod of Covenant in both the Shooting and Combat phases until it was finally FAQed.
