So, I know Space Marines are superhuman, but can they steer a bike with no hands free? How do you model a Space Marine Biker with a Storm Shield and Storm Bolter or any two weapons that require a hand to hold (combat shields for example fit on a Space Marine's wrist/lower arm, so that could work with a Bike).

Forearm mounted storm bolter?

Mounting point for the SB on the bike fairing?

Sling and/or saddle holster for either?

Grot riding pillion, holding the extra weapon?

A Saddle Holster is a great idea... question is, how do you model that? Are there examples of Storm Bolter holsters or do they just look like regular pistol holsters?

Would love to throw a Grot on the bikes holding a Storm Bolter, but it's a Space Marines army... maybe a Cherub?

I added a wee remote turret thingy to some bike conversions I did a while back

You could do a simple "magnetic clamp" and stick the weapon directly to the chassis, like a video game character.

Otherwise I'd make a thin sheet of greenstuff, conform it around the gun, and use that to make a holster. Probably with a trimmed piece of plasticard to serve as the backing/"mounting point," and some gubbins.

If it were an orky bit I'd have some big rivets holding it together. For Space Marines maybe use ammo pouches or a purity seal to dress it up.

If only all Storm Bolters were like like Grey Knight Storm Bolters and could just be molded to the back of the hand armor.

I think you can find a holstered bolter in the attack bike.
Also bolters and other stuff have a maglock system, it can be attached anywhere (theoretically).

The coolest looking option would probably be to model an up-armored bike (additional plating/armour somehow) and feature twin storm-bolters on the front instead of two normal bolters. Would be a lot of modeling and converting, but would be the coolest idea. Basically heavy combat bikes, represenging the wargear options.

I personally used the Ravenwing farings to represent storm shields, since they're so obviously different.

And yes, add some guns to the bike if you want it to look less goofy.

Rule-wise, I'd not put the storm bolter in the bike's front, since there is nothing preventing the biker from firing the bike's weapons as well as his own ranged weapon - as long as that is not a pistol.

I'd mix it up across a squad. One guy might have his shield on the back, another on his arm while the arm is on the handlebar, yet another is actively blocking something.

Same with the stormbolter. Some just glued sideways to the bike - mag lock works on SM armour, why not bikes - some in the hand shooting, some resting on the handlebar.

Wolf Guard Bikers can, but they are an index option. Pretty much any bike unit that isn't basic bikes is an index option at this point.

I’ve seen neat conversions where the SS is mounted to the front of the bike with cut-outs for the bolter barrels.

Remove the light, some of the eagle if required, then make “swooping” cut-outs at the top of the shield for the barrels.

The holding the SB, I suppose. Or vehicle mounted, I think that might look better, on top of the shield?

You could have the stom bolter in one hand, and the storm shield be built around it, like an over-sized version of the "gun shields" in Army of Two:
