I'm relatively new to the hobby, and trying to build some guard while making them look more "heavily armored" than usual. I've got a replacement torso and a replacement helmet. And when certain other things arrive, I should end up with some Primaris blank shoulderpads, so my thought was to fit it over the IG models left shoulder and make them asymmetrical.
Thing is, I don't know if that's going to fit. Has anyone else attempted this? Are there example models? I've been googling around like crazy and drawing a blank.

They will fit fine enough, but they'll look massive. I really don't think it will give the look you want. Far from making them look like more armoured, heavier troops, I think they'll end up just looking comical.

Echoing the previous replies; marine pad will be way too big for human-sized models.
Alternatively, you could use a Tempestus Scion arm; their shoulders are slightly bulkier iirc and a little more ornate. Other than that, you're probably better off looking at AoS bits - Chaos Marauders in particular come to mind, having a few different styles of shoulder plates that should be much more in scale for what you're looking for.

The Scion arms present a different issue in that they are keyed to specific weapons and the like.
If someone really were to want to do asymmetric shoulder plating, the trick is to remove the right shoulderpad and source the ones from the Baneblade and Leman Russ/Chimera kits.

All good answers, thanks! I looked at the Marauder shoulders but they kinda look a bit... Uh... "Chaotic" for my tastes?
Think Stormcast shoulders might work instead?

Negative.
The problem is that you seem to want to just have a bolt-on solution. There isn't really much that will work for that without looking comical.

I vaguely.remeber a decent conversion using the old kroot shoulders because they used to be separate. Just the extra plate beefed the shoulders up while they were still quite a.good scale for the purpose.
I used a bit of GS to bulk up the torso, legs and forearms when I did my CCS in carapace armour
I did a quick test adding another band of armour to the shoulder pad but decided against it in the end.
And painted up, the camo pattern rather hides the effect, but I know it's there

2 ways to go about it: 1 is to use look for suitable shoulder pads, 2 is to look for suitable sleeved bare arms.
I used Necromunda Goliath gang pads here on some catachans that looked right:
Use Madrobot minatures bare arms of your choice along with cadian arms.
