I have one for 40k, and I know that I can just take it and move it to AOS (changing some organization around due to different rules, of course). I do want to get other models later on like the Bloodbound and Wrathmongers, but can I be competitive at all with just daemons?

They are ok. They are not going to win you tournaments by virtue of just showing up and you will have to work for your wins but they are not trash either. Adding the bloodsecrator and the priest up their competitiveness a notch. Typically will see 2-3 blood thirsters.

Mid Table Terrors as my friends put it.
You're not immediately disadvantaged for playing them, but you have to work for your wins. Just like how all armies should be!
Also thirsters really do kill most things, but are fairly squishy in return it feels for such an awesome model

At tournament level points they hold their own just fine.
They aren’t top tier but by no means are they bad.
At lower points they feel a lot stronger though.
We recently had a small 1,000 point league and among those was a list (from the top of my head) containing skarbrand, unfettered fury thirster, 10 letters and 2 units of 5 hounds.
This was absolutely brutal to face at low points as there were 2 big threats that could counter just about anything at those points levels.

Bloodthirsters biggest weakness is they are very killable, at 1000 points it is much harder to focus the offense required to to that. Bringing Skarbrand AND another 'thirster at 1000 points is just mean

We were told it was going to be a fun tournament in terms of just smashing each other to pieces.
I was running Gotrek anyway, so he wasn’t too bad.
Just sucked trying to capture objectives lol.
He did help the greywater army a lot though.

I might do in addition a Hungering Warherd. I know that the chariots are probably useful as fast attacks, but the models just don't do anything for me at all.

Beastmen using the Khorne battalion but playing out of the Khorn book is very fun. B.c beastmen are so fast, if you get a few Blood Tithe points you can rush up your full army, charge, melee, etc.. but you can also spend the points to fight again when you die.
Beastmen has a problem with staying alive, but they are very good at hitting 1 points hard and using their movement to take objectives. They don't have huge hammers and needs to pick their fights, they also are not survivable so they die after taking a point, within Khorne that fixes both problems.
You activate the Battalion the turn you use the BT, now you re-roll hits and wounds, and you attack when you die, multi charging MSU units of Bestigors, Bullgors, even a Ghorgon can be extremely fun.
Then you have Move twice, melee twice, etc.. Having someone weaker units doing that can make them more fun (Ghorgon and Bullgors for example), a 9man Bullgor unit being able to melee twice, or Move twice them charge is really fun.
Now with new khorne DP from StD you can make it even more fun, his CP is all units with 18" halves their runs and charges, biding you time to set up key charges and movements, or stop something from getting an objective.

With all that it seems like you want to run mainly BoC with some DoK on the side. That IS totally viable should you wish to do it, since using Brass Despoilers lets you use Khorne allegiance.

Yes, well. The chariot is just showing its age (Parts of it are old enough to drink and vote! The crew is more recent, but they kept the pigs and frame when they did that update)
Like the centigors and Shaggoth they're metal designs (now in finecast) that never got replaced with a plastic kit. The BoC tome really should have come with new kits

I agree. Even though they look good, I hate how so many of the models are so still in their poses, like the old STD models. They don't even look like they're fighting.
