Do Daemons change their appearances based on the race(s) they face? I.e.-Do they resemble facial features of Aeldari when fighting against them & that of humans or T'au in battle?

The first thing about lore and chaos is that chaos is unpredictable and, well chaotic. So lore for it can vary a lot.

That said its said that Deamonettes will cast a glamour over those near them so that they project a body of beauty for the beholder. The form we see in the game as a model is, close to their natural shape as we might get with any degree of common uniformity and is likely their appearance in battle when their cloak is lost in the chaos of battle and they appear as their demonic selves.

That said there is certainly room for vast amounts of variety.

Not sure how much of it is daemons changing their form as much as their 'form' being the viewer's mind translating the incomprehensible into something relatively sane.

I try to view Warhammer as more of a toolbox with examples than fully complete games.

As far as I can tell, a daemon looks like whatever aspect of that go is in relation to you.

Like if you're a human, they take a "humanoid" like appearance.
Eldar, Orks, etc would view them differently, since the daemons are not "real" in the sense of corporeal real. So they are mutable, constantly changing, flickering into/put of existence, etc...

I think they solidify in form to some extent when they enter the materium though.

Which also helps explain how bullets and knives can damage them (though of course they reform later in the immaterium).

I can assure you that not one of my demon models has ever changed their facial appearance, no matter what my opponents put on the table.
