People have converted ork walkers out of plenty of things. I even once saw a Mr. Potato head converted into an ork walker.
It would seem you just need a basic shape and flexible plastic cards. Attack some rivets along the lone. Attack what ever works as legs and weapon option and bingo bango.
But what would be the easier material to make this out of if you say wanted to field and entier army* out of deff dreads and killar kans?
*Obviusly you would need to devote som amount of models to HQ and such. Perhaps even a transport for them. But all in all you can field 3 deef dreads in one unit, and 6 killar kans in one unit. Rule of three you get 9 deeff dreads and 18 killar kans.

Anything roughly cylindrical works pretty well as a "close to gw" body, particularly for kanz. I've seen plenty of nice looking scratch builds that use pvc pipes as the core structure (and since a length of pipe is dirt cheap, you can definitely do a whole army's worth for a couple bucks). Thicker pvc or cardboard tubes can work for deffdreads, but they have more built up detail that you'll have to add later.
Articulated legs and arms are among the harder parts to build yourself, so plan accordingly or be prepared to buy them (they're often relatively expensive for bits, as they are so annoying to make). Toys or other scale models can be harvested, you'll just need to make sure they mesh with both what you're building and any gw stuff you plan to have in the same army. Sticking to the older plan for killa kanz, where the gun was attached directly to the body rather than on its own arm cuts your arm requirements in half, so that's always an option, too.
And don't forget to look through ebay or your/your friends' scrap piles for ruined vehicles or old marine dreadnoughts from ancient starter sets. You can often pick up those for quite cheap and they make great deffdreads with a little work and some bits. Similarly, if you can find a bits store with any stock, the kan/dread bodies are often pretty inexpensive, as they're basically leftovers from selling all the weapons and arms, so you can grab them for a cheap base.

There's also theoretically nothing stopping you from having 'walkers' on tracks or wheels, especially given the current rules have no distinction between walkers and regular locomotion at all (beyond typical statline differences).

Walker on wheels makes it easy. The piping is also a good idea.
I would really like the 'welded plates' look. I tried something similar on some ogor slaughter asters who drag around that pot. On there I wetted cardboard and used PVA glue to glue them on. The cauldron was a bit to rektangulær for a very good result. But a more traditional cylinder shape will help.
But where do I get rivets? Just a trial nails, or just green stuff?

Wheels/tracks are a fine way to go for ork walkers (I have a bunch converted that way), but tank tracks are even more expensive to source and annoying to build than legs. Wheels are easier to find (and you can just ebay some perfectly suitable lego ones if you don't want to pay a few dollars each for spare trukk ones online). You'll need some convincing way of connecting them to the body, but nested plasticard tube looks the part and is easy to do.
Rivets are generally either sliced from a thin rod (you can make one out of greenstuff if you want) or made from tiny beads and nail art bits (which have the advantage of being half spheres and diamonds rather than round). You can also get a pretty nice rivet and bolt mold from greenstuff world if you plan on making a ton of them.

I found that gel superglue is awesome for weld lines. In the UK I used Loctite gel, and it is perfect. Squidge it out in thick lines at the joines and it dries to make realistic (for 40k) looking ork welds

Greenstuffworld do a great set of rivet moulds. You get four different rivets each in five different sizes, and just press milliput into them. One of my favourite purchases over the last year, can't recommend them enough.

I've used nail art beads and nail art half round 1.5mm to great effect as rivets.

Million different options for rivets. YouTube is invaluable as well as Dakka. Search through the build logs for people doing Orky conversions and prepare to be blown away. Soooo many fantastic ideas in the P&M blogs.
Personally, I do a mix of:
Cut styrene rods
Nail gems
Lay out a ribbon of Magic Sculp and "cookie cutter" it with a small sharpened tube. Remove the rest and leave the little circles
