im planning to do a conversion with a carnifex into a stone crusher carnifex and I'm just wondering what bits to use/kits to buy for parts/techniques to utilise. does anyone have any ideas for this?

The forgeworld kit was retired some years ago. You can still find them on ebay, but they're very pricey. Probably better to find a 3d printer company that will print similar bits for you.

The easiest conversion would be to simply give it four crushing claws. You could cut the blades off of the scything talons and glue them to the back. All with a few carnifex kits.
