I've always had a thing for the Emperor's Champion. I also like Farseers, but prefer my own kit bash to that of any of them sold.
Not the best picture, nor is the model done....but shows you what was used in the kit bash.
I also really like the Games-Day MKIII Boarding Marine that I use for my Marshal.  Looks better with my lighting claw though. ;P

I hate to jump on the bandwagon... but yeah. My favorite miniature in my entire collection, apart from ones I've very heavily converted (like my lord commissar, or berzerkers), or were scratchbuilt (like one of my priests), but for ones that came out of the proverbial box and was just painted up?
It's a warlock. Back when I had worse painting skills (by a fair bit) than I do now. That old metal model wears a mediocre paintjob better than my guardsmen hold up a relatively decent one. Specifically, I'm talking about this one:
except it's in more like biel tan colors.
So pretty. Eldar are pretty.
Though I've got to give MAD props to the new talos. The old one was stupid in every way. The new one is terrifying +1 GW sculptors on that one. That may be my favorite out-of-box GW model at the moment.
A dark knight I'd throw in is the guard officer of the fleet:
It's probably the best mini that really represents in miniature form everything that the fluff says it's supposed to be. An aloof, noble, haughty liaison from the imperial navy. You read the fluff, and imagine what he would look like in your mind. Then you find out that GW sculpted exactly that for you.

I've got a thing for Jump Infantry. My favorite GW models are Eldar Swooping Hawks and Sisters of Battle Seraphim - unfortunately I don't play either of those armies.
For a model that belongs to an army I do play, I've got to nominate Kaptin Badrukk.

Mine would have to be Sayl the faithless and nightmaw, I will be using one of these for my 40k army at some point. Something about the helm that I really dig.

Every Dakkanaught gets a 4+ Pinch of Salt save.
When you suffer a Falling Sky hit, roll a D6 - on a 4+ the hit is ignored as per the Pinch of Salt save. On a 1-3 panic insues - you automatically fail common sense tests for the next 2 weeks and get +7 to your negativity stat. -Praxiss

Probably the Chaos Terminator Lord, it has a lot of different parts and however you assemble it, it will always scream awesome. The fact that it comes with its own little terrain pieces (both the cliff edge and the sword-bearing thrall) means you can really make a dynamic and eye grabbing piece.
