If I take a Ravenwing bike squad and up it to 6 bikes, does the attack bike option take the place of one of the bikes or is it in addition to?

In addition to. A full Ravenwing assault squad consists of 6 bikes, 1 attack bike and a land speeder. Handily the number of riders/crew adds up to 10

Tactics wise, what is a good wargear loadout? And does it make sense to include a speeder in the squadron or should I keep it bikes only?

Leave the speeder out.
100 points for a Tornado speeder with an assault cannon is a waste when you can take a Multimelta/Typhoon speeder for 75.

The gear all depends on what else you have in your army.

I like to run power maul and meltabombs on the sergeant, then throw in either meltagun and flamer, or meltagun and plasma gun.

I generally put the MM on the attack bike, making it a pretty mobile suicide tank killer.

Another reason to leave the speeder out is that the bikes cannot outflank if the squadron has a speeder in it.
