Secondly, I've completely meched up. Thirdly, I have about 65 points to spend. How does this list look? What should I spend my last 65 on?

It's not too shabby. There are a few things to note:
Firstly, with the exception of two vehicles and a single lascannon, you've got nothing in your list higher than S7. This means that you're a few brief encounters with anti-flier units of having no serious anti-tank in your list. I might seriously consider upping the platoons' flamers to meltaguns or the autocannons to lascannons. Likewise, a switch to one of those vets holding meltas wouldn't hurt either.
Secondly, with the exception of the same two fliers, you don't have very much that's going to be able to make it upfield. All your opponent has to do is swat a few fliers, and you are going to have basically no ability to capture or even contest the objectives on your opponent's entire half of the board. This means that your opponent is free to focus on taking your objectives, rather than defending his own. Giving away the initiative like this is rather unfortunate, unless you're playing a gunline, which you're not.
Dropping that pair of easily destroyable HWSs and replacing them with some harker vets or some stormtroopers would help this a lot. If you have the ability to credibly attack your opponents objectives, things are going to be a lot easier for you, and I'm not quite sure how credible only two squads of veterans are. A little more would probably help a lot.

Thanks for the contribution. The plan behind the vets was to zip around the board for a few turns and dump the vets on an objective last minute, whilst the rest of the force fires away. That's looking less and less plausible however, for the reasons you mentioned above. I'm not 100% on the direction I want to take this army in. I like Mech Vets due to the elite troops I get to use, and I like blobs because I used to run Orks and it makes me all fuzzy inside.
Brain-storming:
- Heavy weapons squads
+ Storm Troopers
Possibly:
- Infantry Platoon
+ Veterans
- Something
+ Chimeras
Is it worth putting the Veterans in Chimeras, so that I have something to deploy turn 1 (assuming i scrap the platoon), and to just have the 'dettas as gunboats? Is it also worth scrapping the flyers, and running Hydras instead (assuming I run Melta Vets in Chimeras, or Melta Storm Troopers)?

well what about an armored charge? Drop the vendettas and infantry platoons and do 6x mech vets and some stormies in chimeras and perhaps some hellhound variants. First turn, everything moves forward 12". Second turn, everything's the hell in your opponent's deployment zone.
Interesting additions to this is an infantry platoon with al'rahem, who will allow a bunch of outflanking chimeras, or a chimera with some ogryn in it. Not only are you getting into CC anyways, most likely, but when you're not, 18 S5 ripper gun shots out the back hatch is nothing to sneeze at. You could also perhaps consider some scout sentinels or some demolishers or something.
That way you get the elite that you want from guard, and the highland charge you want from orks.

I've revamped my list; running vets in chimeras, with some in vendettas, my third detta being a lone gunboat. Ill post a list when i get home

I think you will do fine, half of the army is walking but at this size it can't be helped. Personnelly if this is the 1.5k list (did not total up points) use the rest of the points to mount up any squad you can in chimeras, bumb rush for success. Guard is not delicate so don't let it be delicate! With the extra points give all squads you can a medic to double rerolls on those GH rolls and surviving in general. For 210 points a piece you can have 2 executioner tanks with HBS. Their main gun ignores GH so space marine destroying firepower is always nice. The rear 11 is nice too.

The only units in my 1500 list (the updated OP) has only two units that don't have a dedicated transport, and they are the flamer/demo vets. These guys sit in two of the Vendettas, the idea being that the 'Dettas kill something, and the flamers jump out to fry the occupants. The third 'Detta will act as a gunboat/bullet catcher, as well as a gun platform that stays on field in hover mode, whilst the other two go zipping on and off of the board.

I was thinking about that as a possibility. I can use them to pick off small units of things like Havoks or Devestators, as well as using them to try to take out special weapons. Plus, they can always be dropped from bigger lists.
Other than that, I suppose Marbo is 65 points.

I've never played ig but have been thinking about a small army along the same lines as yours. At the moment the list looks like this
+ HQ + (80pts)
* Lord Commissar (80pts)
Boltgun, Carapace Armour (10pts), Close Combat Weapon
+ Elites + (50pts)
* Ratling Squad (50pts)
5x Ratling (50pts)
+ Troops + (444pts)
* Infantry Platoon (362pts)
* Heavy Weapons Squad (90pts)
3x Missile Launcher (30pts)
* Heavy Weapons Squad (75pts)
3x Autocannon (15pts)
* Infantry Squad (80pts)
Meltagun (10pts), Missile Launcher (15pts), Vox Caster (5pts)
* Sergeant
Close Combat Weapon, Laspistol
* Infantry Squad (80pts)
Meltagun (10pts), Missile Launcher (15pts), Vox Caster (5pts)
* Sergeant
Close Combat Weapon, Laspistol
* Platoon Command Squad (37pts)
Vox Caster (5pts)
* Platoon Commander (2pts)
Boltgun (2pts), Close Combat Weapon
* Veteran Squad (82pts)
8x Lasgun, Meltagun (10pts)
* Veteran Sergeant (2pts)
Bolt Pistol (2pts), Shotgun
+ Fast Attack + (425pts)
* Valkyrie Assault Carrier Squadron (145pts)
* Valkyrie (145pts)
2 Multiple Rocket Pods (30pts), Lascannon (15pts)
* Vendetta Gunship Squadron (140pts)
* Vendetta (140pts)
2 Twin-linked Lascannons, Sponson Heavy Bolters (10pts)
* Vendetta Gunship Squadron (140pts)
* Vendetta (140pts)
2 Twin-linked Lascannons, Sponson Heavy Bolters (10pts)
999Pts
It's at a very early stage. To bump up to 1500 I would add two Leman Russ, a chimera and a psyker I think. Just because I have an old leman Russ and chimera lying around.
The ratlings really appeal to me. The rending and, in particular, the pinning special rules could be really handy.

I was thinking I could add in Marbo to fill the gap. As with the Ratlings, I can use him to 'snipe' particular enemies. Even if he ends up being a one-shot wonder, he'll do some damage before getting blasted off the table. And again, at higher points, I can pull him out when force chart room gets tight.

Marbo would be better than ratlings. The 'oh shi-' factor be'll bring when they have other targets to shoot out is worth it.

I'll squeeze Marbo in then. He fills those 65 points nicely. If I find him lacking as the games get bigger, I'll replace him with stormtroopers for a different kind of oh-shi factor

Or you could give the melta vets in a Chimera harker for outflanking armoured melta's.
