Better as in fluff? Fun? Or power? I personally would choose Tau, because they would help you advance in your strategical abilities as you play games due to their lack of power, and they are suppose to get a need book in the near future, and then will be a better army. (Hard to be worse) And I think Tau look awesome.

I picked up Tau first and just started collecting CSM. CSM have a lot of options and can be very versatile. Tough I just use them as allies for all the big toys that my Tau can't take. 6 Broadsides and 1 Forgefiend? Any day.

I'm expecting an Imperial Knights supplement dedicated to GW's loyalist apologetics. Codex: White Knights "In the grim dark future, everything is fine."
"The argument is that we have to do this or we will, bit by bit,
lose everything that we hold dear, everything that keeps the business going. Our crops will wither, our children will die piteous
deaths and the sun will be swept from the sky."

6 Broadsides, a Forgefiend with 3 Ectoplasm cannons, and a Heldrake? Count me in!
As for OP, I'd wait on it for now. Chaos is the flavor of the month, and nids and Tau are both incredibly underpowered in comparison. Tau are supposed to be getting a new codex soon, though (hopefully).
Although, depending on what army you have now, you could just take Tau or Chaos as allies, really.

CSM is by far the most fun, as you have by far the most variety. It NOT the most powerful army, mind you, but it's pretty good, and almost every choice in the new codex is useful somehow. It will last you much longer than the other two, which tend to have very limited good choices. Ofcourse, if you already have a SM army, it makes CSM a lot less interesting, as much of their stuff is a more random SM variant, so you might wanna do something else. CSMs are also one of the BEST armies for conversions, especially if you are good with green stuff, since you can always add tentacles/horns etc to chaosify your units.
That being said, Nids are definately fun, and present amazing conversion opportunities. However, their codex is kinda limited right now, with only few really good choices per FOC slot, and with some units that simply do not work in 6th. The new Biomancy powers make them somewhat competitive, but they still can get a little boring. No other army offers their biological look though, so if you're into that sort of thing, help yourself. You should remember that Tyrands do not do allies, so you will never be able to spice up your existing armies with some nid units.
Tau.... Tau are GREAT as allies. If you have an army that can use them, and most of them can, they are a good choice, as you get a lot more variety with both your existing armies and the Tau, and they plug the long range AT hole of many armies exceedingly well. By themselves they REALLY struggle to win though. They do one thing very well, and just kinda get slaughtered by anything they are not specifically designed to counter. They also dont take to conversions very well, due to their clean, sleek design style. Their gameplay is interesting and very different than most races, with their hit and run tactics, but it's a bit one note. Dark Eldar can play similarly without forgoing variety.
Also, remember that Tau might be getting a new codex soon, according to rumors, so you might wanna wait.

CSM are definitely the easiest of the three to start with; 'Nids and Tau can both be fun, but they're harder to build and play than Chaos is.

Tau and nids are hard.
Everything in the tyranid codex is very balanced against itself (carnifex excludet) but very badly balanced against other codexes. You can still winn but it is a very step climb.
I suspect that the Tau has some very redundant entries that can be hard to spot as a new beginner. You should really go for Chaos. They are fun and "easy" to learn.

I am literally going to bathe in smurf tears.
CSM are great allies though. Their standard troop is cheap, gets 2 special weapons for 10 marines, and fits rather well with a nicely kitted out Lord.
For the lulz, I was going to run a DP, CSM, Heldrake, Mutilator, and Forgefiend. That'd be about half my army for 4 models, but I think it'd still be fun.
Someone a while made the comment, and I think I'd have to agree, that Tau offer more as an Ally than Allies offer Tau.
For a rather decent price you get 3 BS4 Plasma Rifle/Missile pods for the HQ
3 Elites with 3 Twin-linked Missile Pods
only one min. FW squad
and wrap it up with 3 Broadsides.
That comes in just under 700 points. Kind of expensive, but it offers ALOT of accurate high Strength firepower.
It's easier to use Tau to fill the holes in your list, than to fill the many holes in Tau. The reason why I like the CSM is the Forgefiend offers S8 shots on a durable frame, the Heldrake offers anti- Meq or anti-flier, and the troops are great for grabbing objectives.
