Am I missing something, or are Servo-arms just "ignore armour saves" and not AP 2, therefore not getting the +1 on Damage Tables? I think I've looked at all the relevant spots in the BRB and the FAQ, and this seems to be correct.

That's correct. Unless there's a faq that I've missed.

I can't find anything that would have changed it.

It doesn't appear in the weapons appendix of the rulebook because it's wargear, and the FAQs I checked don't mention it.

Personally I'd allow it to be AP 2, but then I always had a soft spot for Techmarines.

Interceptor Drones can disembark at any point during the Sun Shark's move (even though models cannot normally disembark from Zooming Flyers).

Then would you allow Tyranid boneswords to be AP2 as well ?

Why? I'm not popping Land Raiders with warriors.

Doesn't it say say somewhere that a servo harness gives you 2 powerfist attacks - in which case they woudl be Sx2 AP2?

Admittedly it's been a while since I read the SM Codex though.

Nope. S8, ignores armour saves.

Greebo had spent an irritating two minutes in that box. Technically, a cat locked in a box may be alive or it may be dead. You never know until you look. In fact, the mere act of opening the box will determine the state of the cat, although in this case there were three determinate states the cat could be in: these being Alive, Dead, and Bloody Furious.

Yes, as boneswords say they ignore armor saves just like the servo arm.

Could it be written somewhere that weapons that ignore armour have a standard AP...similar to all monstrous creatures regardless of weaponry

Quite the opposite:

Q: If a melee weapon ignores armour saves, such as a Tyranid bonesword or Captain Tycho’s Dead Man’s Hand, is it treated as an unusual power weapon and therefore AP3? (p61)
A: No – it ignores armour saves completely.

There are a handful of weapons that simply ignore armor saves but are not AP2...I believe Eldrad is another example of this. Giving them AP2 would negate the need for this clarification and might make some characters a little too powerful. While one could house rule that any weapon that "ignores armor saves completely" is AP2, there are no rules that actually give them AP2.

I out with in both 40k and WHFB.

I'd add it's worth noting that by making them ignore armor saves and not AP2 these weapons don't get the damage bonus on vehicles. A good for a bad y'know?

Yup, which is why AP2 is always better than 'ignores armour saves'.

Interesting to note; Black Templars servo arms (and harnesses) specify that the attacks are treated as a power fist.
