So for a Campagin coming up i have a Detachment of Elysians that im trying to build to fit that true Commando feel - this is what i have been using them as such -
( Don't have actual rules )
Vet Squad - x3 Plasma Guns , Demolitions Doctrine , Greniders - Vendetta Transport - Does this make sense at all ? what would you guys suggest

Don't ever buy two doctrines for veteran squads, it's way too many points to invest in a single squad of guardsmen. At most, buy one of them, and not carapace.
Anyway, if it's possible I'd wait until the updated Elysian list comes out, as it will probably change with 6th, before you make any final commitments. Otherwise a squad or three of plasma vets in Vendettas sounds about right, maybe with a Vulture or Avenger to go with them.

I know about the doctrines and i don't presonally prefer them but im trying to make them fullfy and fill the Role of Commandos to the best of their extent

How exactly does giving them carapace armor make them more fluffy than not having it? Is this another case of "fluffy" being a synonym for "bad at winning games"?

"Best" does not mean "heaviest armor". For example, the Elysian models are only wearing flak armor and the fluff describes them often discarding even that to save weight.

Elysians have a high quantity of carapace armor.
But the demolitions doctrine doesn't fit them much, nor is it an effective upgrade for plasvets.

But the models are wearing flak armor (even if it's high quality it has nowhere near the full-body coverage of carapace), the fluff describes it as minimalist light-weight armor, most Elysian squads are limited to flak armor rules-wise, and there was even talk of carapace-armored Elysians as a separate set of models. I'm sure they're sometimes issued carapace armor, but it's not the standard equipment.
But the demolitions doctrine doesn't fit them much, nor is it an effective upgrade for plasvets.
Actually demolitions is the best fit fluff-wise since it provides the anti-tank/building firepower drop troops can't get from the usual sources, and even basic Elysian platoon squads carry demo charges.
Is it effective at winning games? Maybe. The melta bombs aren't worth much, but the demo charge can certainly add a lot of firepower to a unit that often needs to kill its target in one shot or die to it next turn. Without the protection of a Chimera you're talking about a one-shot unit, so why not make it count?
