Yeah, I think the most potential is in things happening way before or way after the movies.
Do an Old Republic series maybe. Perhaps the war about the formation of the Rebublic. Or the Mandalorian Wars perhaps. That would certaintly be epic.

Or maybe have his thoughts be captions on the bottom of the screen and the whole thing would be filmed through his little eye hole.
It would be funny as hell and totally not serious. But thats the only way I could see it working. If you tried to have it be a serious film I think it would just be bad.
If he does have a voice, it has to be something silly. Like some guy straight out of the Bronx

Think Goodfellas, but about an alien mafia, from the perspective of R2D2, narrorated by Dave Chappelle. Morgan Freeman plays an old school gangster who knows he should retire, but he can't give up the thrill of crime. Robert Downey Jr. as a corrupt FBI Officer, who gives the two tips and helps cover up their crimes. Christian Bale is their psychotic associate, who has an obsession with dangerous women. Sylvester Stallon is the brains of the operation, planning their every move and trying to manage the groupful of psychotics. And Robert DeNiro, who stands behind a greenscreen and plays as a huge slug monster (think Jabba the Hutt) is the boss of the operation.
It follows the rise and fall of their criminal operation. It includes memorable scenes such as Christian Bale and R2D2 dumping a corpse in the river, only to find it won't sink. They shoot it full of holes, but its still floating. And then they hear sirens. Christian Bale has to dive underwater and hold the corpse down until the cops leave. Morgan Freeman has a highly memorable cameo as Robert Downey Jr.'s ex-wive, who intends on ruining his life. And , in one the most horrific scenes in all of film, Sylvester Stallon brutally murders a Gungun with a lisp. He shoots it twice, hits it repeatedly with a hammer, and then stoops to wringing its throat.

Not doing trilogies sounds like a decent idea to me. If you have a bad plot/character, you only have to suffer through one, instead of watch them try to slap spackle onto a gak foundation and stretch it out for three movies.

That's how I imagine the Anakin/Obiwan relationship in the new trilogy being if Lucas didn't suck.
Imagine no child Anakin. We meet Anakin a padawan, and Obiwan a young knight under the service of Liam Neeson in the Phantom Menace. Gak hits the hyper drive, Liam Neeson dies and Anakin and Obiwan begin to unravel a massive conspiracy leading to the clone wars.

Mace Windu is utterly boring and Kid Fisto is a pedophile not exactly the best characters to theme your plot around.

You'd also know from the bounty hunter books, that he was a Journeyman Protector (though no one goes into what that means) and apparently kills the previous owner of his armor (allegedly), which makes more sense when you consider that all the mandalorians supposedly went the way of the Jedi during the Mandalorian Wars, he owns all blueprints to his ship, and is 'currently' on Slave IV, though I only recall one actually being destroyed, and have no idea what happened to the others.
I don't buy the whole Boba Fett is a clone thing. One, it really ruins a ton of his previously existing backstory. To me, being a clone, even if he is a clone of a badass, just makes him suddenly less cool...unless that was Lucas' intent the whole time :(

You mean other than the fan made, impossible to find version? They showed it at FAOShwartz years ago, I saw it in Chicago when I was 11. Tried forever to get my hands on it, and eventually gave up. But a version does exist. Few other people have admitted to seeing it, but most people gave me blank looks when I discussed it. I still have all of the SotE toys-including Dash's ship!

I think the cool thing about it is that there is a chance for new directors who spin their own take on SW.
For me. I'd like something like a totally separate group of Rebel spys deep in the Empire trying to get information to the Rebels. Hell, the story of them getting the false information on the 2nd Death Star is pretty cool. I want something with good story as well as eye candy.

Except that blasters, being energy weapons, don't actually punch holes in people... they just kinda leave burn marks. And Lightsabers instantly cauterize wounds. So no, Kill Bill it ain't.
Oh yes, and also: Disney will never release a non-PG13 (is that still a thing in the US?) or higher movie about Star Wars. Never.

Okay, yeah that's what I was thinking. I mean, Revenge of the Sith is rated PG-13 and Disney has released PG-13 films before, so I doubt PG-13 would be completely off the table. I don't think anyone is really expecting to see an R-rated Star Wars film.
