Pretty much two is always better there? Are Interceptors a poor substitute for the 2nd Dreadknight?

The issue with things like Flyers, Transports or MCs is Target priority.
They are large, high impact models. If you only have one of the above, it will draw a lot of fire from the enemy and die rather fast.
With multiples of the above you gain target saturation. It basically makes you more durable and gives you redundancy.

I have one and love using it but it does die rather quickly, running 2 or even 3 would be awesome though

Big scary things are always better run in numbers. Not always another dreadknight, but anything big and scary. I found a LR survives a lot more when there is a defiler beside it in the field than when it is alone.
Interceptor would not play the same role, since your opponent would not use the same weapons to target them. A CC dread would be a better option.

I've play a few small point games and on tabling a dreadnought it became a dakka magnet which happened to be handy cos whilst they were shooting at that they weren't shooting at the termies camped on the objective

I faced two in a Draigowing army last night. They were a pain to get rid of.

I'd definitely want two then. As Seb said, interceptors get shot at by different things, so don't distract from the dreadknight.

The short answer is yes, two is always better, unless of course you're playing at low point ranges (which you're not). The long answer I fear I cannot say. Is a single DK a good idea? It really depends on what its role is within your list as a whole. I think 1 is a decent idea. It will get shot at, no doubt, but it can really wreak havoc if it gets a chance to. You just have to make the shunt count and not charge headlong into things you know you'll wipe out in one turn.

Two is always better. Hands down. Unfortunately they are a lot of points properly kitted out. They work really well in tandem or hunting soft targets solo. They also make excellent grand strategy targets.
