I don't know much about B5 but yeah, pre-covenant war UNSC is pretty crap, the only enemy they faced at that point we're insurrectionists and the military reflects that.
Now if you took Humanity from the Forerunner-Human war era this would be a completely different story.
The Minbari were not 'space nazis', they experienced a racial genocidal rage when the humans ignored their overtures of peace (gun ports open to show they were not charged - not their fault EA freaked about that, it's the same rationale as an open palm in greeting to show you are not holding a weapon ready) and the primitive earthlings reacted in total panic by shooting the Minbari cruiser at point blank and killing Minbari Gandhi, the one Minbari they all, from all castes, loved and obeyed.
They have been a space faring race for more than a thousand years, their ships and firepower dwarf anyone else who is not a First One, the UNSC in comparison is somewhat less advanced than the Earth Alliance in B5 (artificial gravity advances being a notable exception).
Further, one of the really important aspects of a hypothetical war is markedly different.
Transportation. B5 Jump tech is massively more advanced for ALL races than the slipstreaming that Halo ships utilize, covering far larger distances in far smaller times. Also, all ships tend to move at a single pace through 'jumpspace' allowing B5 fleets to move as one body, to any point, much faster. UNSC ships, already described as moving far far slower than covenant ships, are further limited due to their ships moving at relative speeds in slipstreaming as they do in realspace, so their light, fast stuff gets there before their slow heavy stuff.
This means the Minbari can jump all over the UNSC territory, as huge and cohesive fleets, flatten colonies and military bases and be home in time for tea.

I could very much see the Membari sitting around sipping tea after wiping out a battle fleet, provided there were proper rituals going, more like a Japanese Tea Ceremony.
Centauri might be a more even match, but they outclassed earth ships in B5 too, just not by that much.

If it's a war fought mostly with ships then the UNSC is always screwed. Against the Covenant they won almost every ground based war, then the Covvy fleet showed up in force, killed the fleet, glassed the planet.

Death stars are massively ponderous, slow and covered in holes you can fly into and blow it up, minbari fighters would be all over that thing in seconds to get inside and suicide ram anything that looked like a 'central core'.
The Sun Crusher, aside from being quite possibly the shittiest looking thing ever designed (it looks like an ice cream!?!) and reading on power levels like the worst of fanfiction, would be shot to pieces or just held in tractor beams whilst the minbari psykers peeled the mind off it's pilot.
Well I'd give to the GE winning vs. the Membari, not because of the death star etc. but because they had a monster load of ships and productive capacity vs. the Membari.
Like the EOM vs. the Eldar, the Membari are tough, but the GE are good also and they have scads of resources, a major portion of a galaxy vs. one primary planet and (likely) some colonies.

The death star would never have survived to firing range with the main gun intact. The suncrusher is Mary Sue out the wazoo.
The empire had the resounces of MANY primary planets and countless secondary ones. The death star alone probably had more fighters than the membari fleet had ships of all sorts. But their ships are also pretty clumsy in comparison to the Membari. I wouldn't put it past a Sharlin to be able to DODGE much of the fire of a Super class Star Destroyer at any sort of range. Never mind what the White Stars would do to an Imperial fleet.
On topic... I have to agree. UNSC can't even call on the forces and tech available to the Earth Alliance... and the Membari walked straight through the Earth Alliance, almost without loss. USNC can't even begin to cope with that much firepower.

I couldn't find any decent stats for the B5 ships. That said, I find it unlikely that the membari could beat the GE. When one takes a look at both manufacturing capability, personnel resources, not to mention the actual tech level of the ships themselves, the GE should have them beat by quite a bit.
And the UNSC would likely die, though it would be interesting to see what the membari's computing capabilities are, as the UNSC's AI's if left to their own devices could possibly sway the war in their favour.
Ayah we're talking sci fi scale differences. In B5 there are a plethora of other races, but not like the GE (more biomass). Since the races occasionally fight over colony worlds I'm thinking the number of habitable planets are a lot less as well.

GE has shielding technology. I've only seen the first four(?) seasons of B5 and that tech never existed within that show. But the Minbari have trippy bio-ships. Also isn't the GE many orders of magnitude larger than the Minbari Federation and have an unimaginably large manufacturing capacity?

Yes on all counts.
Membari ships (at least the whitestars and later Victory ships) had energy absorbing technology that severely reduced the effect of weapons directed at them. In the B5 galaxy ships also can shoot down a lot incoming ordnance with the exception of directed energy weapons (ray guns). They also had technology that blocked enemy tracking systems (a major reason Earth lost to them).
Also yes in that its a scale thing. The GE represents a signifcant portion of a galaxy (hence: GE). They have shields, but the effect of those shields don't seem especially great except for fighters and death stars (aka their shields are excellent plot armor). Their shields seem particularly strong from land based generators.

Field commanders are supposed to make adjustments if necessary. In this case, it proved disastrous.
And like a fool I ask yet again: why would the Minbari curbstomp the UNSC?
As it was pointed out above the UNSC's weapons and equipment are on par or worse than current human tech. The Minbari nearly wiped out future humans, who have far better tech than current humans, while losing only one starship.

Considering the jammers were such that the earthers couldn't track them (even when they could see them er...) any earth ship had problems hitting them. You could ram them though...
Probably safe to say you could damage a Membari cruiser, buts its weaponry would literally slice you in half otherwise.

Shields are a tough call in threads like this, since you don't know what they're designed to stop. For instance, in the star trek universe, there are lasers, phasers and disrupters and they are technically different. Lasers for instance, are laughably weak to the point of obsolescence. To the audience, they look the same. One universe's shield might not stop another universe's beam weapon at all.
So we can't really assume that anyone's shields would even be capable of stopping any particular weapon.
Or on the flip side, those shields might stop EVERYTHING the other universe can offer. Some scifi ONLY has projectiles for instance. That might be useless against another universe in which projectiles are obsolete.
