I'm not giving out the seed, or people can just go creative and find hidden things like Strongholds and dungeons etc. Or they can use external utilities to find said hidden things.

That will work just fine, I plan on cutting down those tree's for lumber anyway.

Happy to have my stuff sticking out into the ocean. Could I be in the furthest right corner, around 3000, -3600? (And, yes, there's an NPC village near-ish there by the look of it, which I will probably make some attempt to claim once we actually start playing but which is fair game till I get there...)

I agree with terrain generation, I probably would have settled in that third link you posted, but in the old map I swore fealty to the Holy Nation of Kiip, so I'm keeping that oath into this new server

That spot lies something like 800 blocks from me, so it aught not to be an issue. From the looks of the area that I'm in I may expand into the desert to the north little, and island to the south, but you're at the far end of the savannah biome I'm in, so I doubt we'd wind up getting in one another's way even if you did build about the village at its edge or whatever.

Maybe? I've never really undertaken any massive projects in minecraft before, mostly just towers, castles, etc... Have we decided where the Nether portal will be? Or is my tower far enough away that I can have my own?

Nope. not too late yet, got your coords now, plus Wyrmalla was slightly too big, so has been moved to his second choice, slightly further to the north.
