Really, the only thing that an Ork would explicitly *hate* is peace.
This, of course, is why Orks are the only race in 40k that's explicitly happy.
Nurgle Daemons.
Nurgle = Santa, it's obvious.
Both are fat, happy and have gifts for one and all.

Studio fluff states that the Tau's form of combat "greatly irritates" orks because their superior firing range and mobility allows them to blow the orks apart before they can even get into range with their guns, much less melee combat, thus robbing them of any real "fun". The War of Dakka is also apparently over, going off of the Farsight Enclaves book- Farsight routes the Waaagh that started the war, then kills the warboss in single combat.

Orks love any kind of fight, although the different Clans have their preferences.
Goffs love close combat, and the Evil Sunz love to go fast. My example is Goffs fighting Eldar would be a bit annoyed by them running away all the time, whereas the Evil Sunz might be thrilled by the hunt and constant the need for speed on the battlefield.

Would this be from the Tau Codex by any chance? If so you can't really take it as a source of how Orks feel about Tau.
I can see an ork thinking another ork getting hit with a rail gun round was hilarious.

Nope, it's from the Ork Codex.
Codex Orks 4e, page 28 wrote:Ork Warlords fighting against the nascent empire of the Tau have often found themselves sorely outgunned. This is very irritating for the Ork forces involved, and sometimes even results in a greenskin retreat, the Warlords muttering to themselves that the Tau have no idea 'how to fight proper.'

Please, that's just the grumblings of a loser. All Orks grumble about their enemies not fighting properly when they're beaten. The winners of course always fight properly, because they won. See?

The Orks have lost every war they've been involved in with the Tau in the fluff.

The Orks lose a majority of the wars they start with other factions.
The problem is that they always start up a new one without end.

The orks that won fought properly, the ones that lost didn't. They were too weak, didn't bring enough choppa and dakka. No wonder they lost.
As I recall there's even a quote about that in some Ork codex... Something along the lines of "If we win we win. If we die we're dead. And if we ran away we can always come back for another go so it doesn't really count as a defeat either, see?"

Yes, except it says 'If we die, we die fightin' so it doesn't count.'
Ergo, Orks never lose.

Ork religious belief is that Gork and Mork just shove you into another body anyways (there's also an orky quote on that, I think?). That's probably another reason why it's nearly impossible for an ork to comprehend why anyone would grieve about death.
There isn't any faction in particular that hates orks more than other factions to my knowledge, but there are individual subfactions that do. Biel Tian hates Orks most of all because they're the biggest threat to Eldar recolonization, if I recall correctly. Yarrik of course has his rivalry with Graz. And Imhotek hates orks the most, too.

Eldar hands down, (Dark eldar would be included as well). Ork boss's are always scoffin at "Those pesky schemin, triksy eldar!" They hate the hit and run tactics that eldar use when fighting, in addition to their manipulation, to which they trick them into their doom.
After that I would say Space Marines, although they aren't ach enemies, they are more of an orks passage to moving up in the Waagh to becoming Nobs, and finally the big boss. Space Marines are tough opponents and always bring a nice respectable fight and smaller orks greatly respect orks that have taken down space marines in single handed combat.

Orks think tau cheat, and orks are the only race that the tau will kill on the spot: they tried the greater good, and it didn't work.
Orks could be mankinds greatest hope against the tyranids though...just putting that out there.

The Tau apparently did try peaceful contact with the Tyranids upon first meeting them. They don't anymore, can't Imagine why.

Commissar Yarrick & the Steel Legion. Seeing as the Ork Warboss Ghazghkull has led the biggest Waghhh's known in imperial history both on Armageddon its difficult to dispute. Also, after Ghazghkull's defeat in the second war on Armageddon, Yarrick pursued Ghazghkull only to be captured & tortured. Ghazghkull then let Yarrick live so that they may fight yet another day & said something like "Good enemies are ard to find."
Fighting the imperium is like the Orks Valhalla, because they know once they attack something the imperium will respond & send more & more troops to fight, eventually space marines etc. They know they are in for a good fight.

I can imagine that a Marine kill would be prestigious, given the number difference. One million Marines, trillions of Orks.

More likely that just means that most Orks have no clue what a marine is, or that they exist at all. So like the rest of hte galaxy really.

I dunno, ork news seems to get around quickly from what I've seen in the fluff. Feral orks are stated to adopt to normal ork culture VERY fast once they get in contact with other orks, aren't they?
When was the last time in the fluff we saw an example of an ork that did NOT know what a humie, space marine, or Yarrick was? I know we haven't had many opportunities to see such a case, but you'd think some cases of orks saying "What that?" would have turned up by now in a story somewhere if orks were really that ignorant of outside things.

Not really sure about that. Most Ork depictions have them talking about them as though they're really no different than other humans except for the better armor they wear.
