If you got Forgeworld, a Meka-Dread with a Shunta, Grot Battle Tanks with Rokkits, Lifta Droppa (it can hurt vehicles, does that mean it can hurt a super heavy?), Big Trakks, and a Mega Dread will Rokkits/Killkannons can all hurt it.
Personally, I think that a Lifta Droppa is the best bet, if it will work at all. A Deffrolla has to get really close and might get assaulted by the D weapon before it can ever ram.
PS: Don't forget the Stompas, or more specifically, the Kustom Stompa from Forgeworld. You can tailor that thing specifically for killing Knights. Take Deth Kannons and a Deff Arsenal, fill it with Tankbustas (670 + 225). There are some other defensive options but that will really cut into the points for the rest of your army.
it sounds like you are thinking of the old lifta droppa.. these days it can't pick up any veichles above 4 hullpoints..so no super heavies / walker at all.

Dakka is the ork word for shooting, but the ork concept of shooting is saturation fire. Just as there is no such thing as a "miss" in a target-rich environment, there is no such thing as a "dodge" in a bullet rich one

Unfortunately, i feel like you'll have to throw all you got simultaniously at a 400 pt knight. And won't reliably down it. Providing there are other forces lurking around, it's highly unlikely u'll manage to do what you plan without getting super-lucky.

It seems to me, there are two models of Knight, with one solution each:
Cannon Knight=Squish it flat with a deffrolla
Melta Knight=Drown it in cheap bodies
Just a thought, if the stomp's going to kill the gits anyway, why not swamp it with 90 pts. of grots, get the runtherds up next to it and make sure it's making the minimum amount of stomps it can.

I don't remember, does the drive-by end it's movement? So will it finish the turn in btb with the knight? Either way, it's not cc, so the knight won't stomp that turn. That sounds like a pretty fun idea, and hilarious to imagine that battle panning out. With nobs trying to board it and trukks ramshackling all over the place from stomps, and then they whole thing going nuclear eventually..

I have not played orks in this edition, you are correct.
As long as your boardingplank has moved 12" or less, and the target vehicle has moved 12" or less (knights can only go 12"...) you only have to be within 2" to make the attacks. So you won't be in btb, but you will be very very close. The knight does not get to stomp or attack back, or overwatch against it. [edit super heavies don't get to fire overwatch ever so not a problem]
Another really nice piece is the grabbing Klaw, you use it in your opponents movement phase, if it goes off they may not move for the turn, as turn goes past movement phase this means they may not assault you if it works
