Am I correct in resolving Perils of the Warp on one of my psykers before the enemy gets a chance at Deny the Witch?

In other words:

1.) Double 6's
2.) Power Drain (A wound, and Minus d3 Warp Charge for both players)
3.) Time to Deny the Witch

Seconding this, also adding that you will find it in the (i believe) resolving psychic powers or manifesting powers section in the Psyker phase chapter(? Is that the right name for it... section, maybe? It's around page 23.)
Just in case anyone asks for you to show it.

If I sound like I'm being a condescending butthole, I'm not. Read my reply as neutrally as possible, please and thank you.

What happens when the perils kills the psyker, when the power targets the psyker and his unit?

According to Perils, if it is manifested successfully, it still goes off even if the psyker is killed by the perils.

But what would you do with, say, Gate of Infinity or Hammer Hand? Does the rest of the unit deepstrike or gain +2 strength?

Targeting occurs at step 2 in the process, before testing if Perils even occur, so that Requirement would still have been checked off even if the Psyker has be removed as a Casualty.
The psykers death after that point is irrelevant, assuming the instructions don't require us to measure to the poor guy or the likes, as the power will remain in effect till the start of the next Psychic Phase.

8th made it so I can no longer sway Tau onto the side of Chaos, but they will eventually turn aside from their idea of the Greater Good to embrace the Greatest of pleasures.

I'm guessing you resolve the power anyway, if you suffer Perils.. So you'd deepstrike, place the models, then remove the psyker if he takes his last wound. Viola- power still goes off
