I've noticed a few of the Horus Heresy novels describe the Primarchs as having hearts whilst others only a single heart.
Is it "canon" that some have one and others have two? Or shock horror is it another unexplained inconsistency?
If so, what's your opinion on what they have? 1 or 2?

I assumed they had two, the difference being they are there in their DNA instead of like a Space Marine where they are added later.

Marines have a primary heart, and a secondary that starts up as needed- wound to the primary, or exertion. When they talk about heart in the singualr, they probably mean the primary when they are not being metaphorical. That said, Primarch phisiology are as far beyond normal Astartes and Astartes are to humans.

Heard that quoted before, and from what I remember it was Ahriman who said as much, someone who's never studied a Primarch's anatomy. If it were Fabius Bile I would give credence to the claim.

Considering the Emperor gained the knowledge to create the Primarchs from the Chaos Gods, I Wouldn't call it far fetched.
They're beings of the Warp, Typical Human anatomy might not apply to them.

Evidence to support your claim? All that's known is that the Chaos Gods were involved somehow in their making, not what their involvement actually did. The Emperor used his own genetic material to build their bodies and he was already manipulating genes years before with the Thunder Warriors. And they are not beings of the Warp. That would imply they are Daemons which they do share characteristics with (Fulgrim alludes to as much in The Primarchs) but they are not Warp Entities like them.
