That being said, my opponents also make a lot of mistakes I only find out after the game, such as using Pask's Warlord Trait when he is not the Warlord, Pathfinders at Leadership 10 with no Ethereal and or not rolling to see Old One Eye is revived or not. These are Codex specific and since I don't have access to anything other than Eldar and Grey Knights, I can only see after the game.

Well, with regard to the skimmer mistake, have you considered making some counters (pieces of paper with 'JINK' written on them will do)? Then, when one of your skimmers Jinks, you can give it the counter so you'll remember which ones Jinked in your subsequent shooting phase. If it helps, you could also write 'Snapshots only' on the counters as a further reminder.
You could also make Warlord counters, though some people might consider those akin to 'KILL ME' counters.
Also, if you print your army list, don't be afraid to annotate it. e.g. if you keep forgetting about a piece of Wargear or a particular special rule, make a note at the top of your list and underline it or circle it or something.
In terms of special characters (and any other units with a lot of rules), I advise you to read their rules thoroughly before using them. Then, during the game, read their rules again during Deployment, Movement, Shooting, Assault and when they take a wound. It's a pain, but better than only finding out after the game that your character had
IWND, or gave his unit Counter Attack, or had Melta Bombs, or some other rule you could easily have missed/forgotten when you read his rules.
If you don't own the book yourself, ask to see your opponent's book when he uses that character/unit/wargear. People make mistakes, and there's no harm in checking something for yourself. Also, especially with characters/units that have a lot of rules, it's often a lot easier to remember if you read them for yourself. Personally, when someone starts reading my their character's list of rules/gear, I find it goes in one ear and out the other.
Lastly, there's no harm in double-checking rules. If a rule doesn't feel right, check it. If you think you remember a rule, but aren't totally sure, check it.
One other thing - obviously this checking rules takes a lot of time, so try to do it while your opponent is taking his turn. Now, obviously this isn't always possible, but you should have an idea of at least some of the things you'll want to do in your next turn. e.g. Do you have a unit that wants to move or charge through cover? Well look up those rules. Is one of your characters likely to be in combat? Well, now might be a good time to check his stats, weapons and such. etc.
