I know Orks generally like to build their equivalent machines to be bigger than those of the other races. So is there any particular reason their dreads and titans are shorter than those of the other races ? Or does the "bigger" part only mean "wider" when it comes to Ork war-machines ?

They mimic the Orks' stooped over posture. If an Ork stood upright, it would tower over a Marine, but instead, its head is hunched over.

Yup.
Ork stuff is like a big fat ork, laden with guns.
They could build tall and spindly if they really wanted, but it's not really the ork way..
That said, their dreads are not shorter than other races dreads.
the Deff Dredd towers over SM dreads, which are closer to Killa Kan sized.

It would tower over a normal human. I don't think they are taller than marines, unless you consider particularly big ones like veteran Nobz and Warbosses.

Uh, hunched over, they're still taller than a normal humie, and about equal with a Marine. Yeah, I can totally see them being taller than a Marine if they stood upright.

I think an ork would be roughly marine height, as in 7'. Nobz can be ten feet tall while stooped, so they are significantly larger than a marine. But size doesn't really tell the full story for a marine. A marine is far stronger than their size would indicate.

Ork boyz are about the same height as humans when hunched over.
Back on topic: "Big" doesn't necessarily mean tall. Big is combination of height and width.
In general, something that occupies a lot of space.

I think you are confusing the 'dreads and titans' produced for the TT with 'all ork walkers'.
Ork Killa Kans are a bit smaller than SM Dreadnoughts, but Ork Deff Dreads are a bit larger.
Mega/Mecha Dreads are bigger than SM Dreadnoughts (although perhaps not bigger than Contemptor Dreadnoughts).
The Gorka/Morkanaut is not as tall as a Wraithknight or Dreadknight, but is certainly bulkier.
Then you have the Stompa, which is certainly not smaller than a Wraithknight or Dreadknight. It is smaller than some of the FW Titans, but it's the smallest Ork 'Titan' class. Gargants and Great Gargants (and Mega-Gargants) are all very, very large. They are so large, in fact, that FW/ GW don't even make them.
The largest Titans FW makes (the Reaver) is larger than any Ork walker they make, but that doesn't imply that orks don't have larger walkers in the 40K universe.
On top of all that, Ork Meks don't tend to build agile, nimble walkers. The Megadread is about as slender and graceful a walker as you will see from Orks. So, when they build walkers, the orks tend to build sturdy, pyramidal walkers with low centers of gravity. Even when their walkers are shorter than other races', the ork ones tend to be more massive. The immense Mega-Gargant looks kind of like a walking ziggurat!
