What happens if a FMC is forced to move 12" without pivoting due to failing the One Eye Open rule, and would land on top of enemy models? Is it moved the minimum distance? If so, could I get a source for that, please? I can't seem to find anything for that.

I believe you can still choose the direction if you fail OEO. And there is no stated penalty for FMCs if they can't move the full distance.

Actually they can't pivot.
“Zooming Flyers and Swooping Flying Monstrous Creatures may not pivot and must instead move the minimum distance required (18" and 12" respectively).”

I could be mistaken but if a flyer is forced to move its min distance and it cannot be legally placed then it crashes (They used to try this against necrons back when Flying Circus was big)
If it is true then I would expect the same issue to affect FMCs

FMC have no such clause.

FMCs always have the option to enter glide mode, so they can never be forced to crash. Why would one eye open prevent this?
