Also, it seems that quite a few tournaments are ruling it as BS1 WS1 rather than snapshots/hit on sixes, so if you find yourself in that scenario then multiple Ion Accelerator templates (especially with markerlight support) should hurt it.

Tau shouldn't have to worry overly much about it. With high volume of attacks and Markerlights, you should be able to punch out some decent damage anyway.
What are you having trouble being invisible? MCs? Centurions?

Which tournaments are those? Just Frontline Gaming ITC? Or have NOVA, ATC, Adepticon also ruled this way?
I for one think it's a good ruling.

I know Adepticon did not, I think NOVA might have.
ITC is becoming more widespread, I think people are starting to adopt their rulings (as they're all fairly balanced)

Thats why I love daemons, they have so many tools to deal with the current top tournament meta.
So take invisible centstar for a example, just throw in your invisible flesh hounds or grim+cursed earth screamers to tar pit them. If they try to gate, most top daemon armies should have enough warp charges to block it (so either block the gate or the invisibility). Fateweaver can BoT the crap out of them, hopefully rolling a 6 for instakill. Hopefully he can also roll some more beam or nova power for his other powers therefore doing even more damage to the cents in one physic phase. If you have your HoT rolled only on malefic powers, you'll probably get inferno gaze and beam them some more.
Belakor has all telepathy powers, so if you don't do enough damage with your beams and novas attacks, you drop some maledictions on him. Terrify+dominate and/or hallucination.

Well I was having trouble with an invisible+shrouded scout squad deathstar in a land raider with a librarian and chaplain to boot. The stupid thing was that he started his units all in the land raider which you can't do during deployment because infiltrators can't be joined by non-infiltrate IC's.

Also, I don't think hitting on a 5 and getting hit on a 3 is necessarily the worst thing. Especially if you have way more 'cheap' assault vs an opponent's Deathstar.

You hit on 6-s and can only fire snapshots at them. It's no big deal if you manage to catch them with a tarpit cause you're not aiming to actually kill anything with a tarpit unit. Unless they have H&R or can deepstrike out of mellee. In this case you simply can't kill or tarpit them.

I'm pretty sure you hit on 6-s in mellee too.

You are correct!
Ok, let's summarize things that -directly- ignore Invisibility:
1. Hammer of Wrath attacks.
2. Wargear that specifies "always hits on #", like Kharn.
3. Nova stuff.
4. Beam stuff.
5. Auto-hit melee attacks, like Mandiblasters.
6. When blasts originally targeting another unit scatter on to the otherwise Invisible unit.
7. Weapons that just hit on a line, like the Old Vibro Cannons.
8. If something improves the BS of specifically Snap Shots. Since Invisibility
states "can only be fired at with Snap Shots", if Snap Shots are improved then
the chance to hit is increased, bit since it's still a "Snap Shot" blast stuff is still out.

9. Bombs
10. Dangerous terrain - for example, pyromancy has a power that makes every enemy model within 6" move as if it was in dangerous terrain
11. Psy powers that are maledictions - Hallucination result of 3. Arguably, foreboding could allow you fire overwatch at full bs and would override the invisibility rule but i'm not sure.

Prescience a solitaire or troupe full of harlequins embrace, and/or cast the fog of war power from phantasmancy. They would get to reroll all of thier missed attacks, and any 6 rolled to hitnwounds automatically at ap2( the solitaire gets to chose the target due to precision strikes). The fog of war power is the malediction version of invisibility. Now they can't do anything effective either

I don't think that an invisible target can even be hit by a bomb because it has to be a snap shot.

I recommend scatterbikes. 1K of them gets you 22 wounds on an invisible T4 unit, or 18 on a T5 unit.
