I'm new to Infinity (and wargaming in general), but what brought Infinity to my attention is the small skirmish style battles, shorter game length, lower cost than most other popular wargames to get started with, and the relative balance between the 8 factions, so there isn't a wrong choice (hopefully that last part is correct?)
I've read a bit of the rules, and I've watched 20-some good battle reports so I'm familiar with the flow, and I really like what I've read/seen so far!
Unfortunately, I haven't (yet) found anything that describes the difference between the general play-style of each of the 8 factions, lore and model aesthetics aside. Can anyone help?

There not being a wrong choice is correct to a point. It's still possible to make a bad list. Like, not including specialists will lose you the game since you won't be able to complete objectives. But every unit is viable in its own way. A common theme in discussions about unit is some people saying a unit is bad, and others saying it's perfectly fine. The general reason is different units combinations of weapons and abilities suit different playstyles. So what works for one person might not work for you, and vice versa. This makes netlisting (copy/pasting successful tournament lists) a lot harder.
Playstyles of each faction is a lengthy ask, and I'm at work, so I'll leave that for someone else..

I've only been playing Infinity for a short while, but it seems that each faction's fluff is reflected in their play style. For example, I am starting with Nomads. They are essentially punk rockers in space, and, as such, are incredibly adaptable and excellent at ruining other people's plans. The Bakunin sectorial of the Nomads represents the artists, smugglers, and general weirdos that like to travel together. As such, they have access to strange units like the Überfallkommando, but suffer from reduced shooting capabilities. Corregidor, the other Nomads sectorial, is composed of veteran mercenaries, and thus has a more straightforward, 'shooty' style. Most other factions are pretty spot-on with the rules in relation to fluff, although there might be some slight variation depending on each sectorial.

To add to that about Haqqislam, my faction - they're a faction based around medical research and scientific enlightenment. As such, they have a higher WIP value than other factions, with the lowest being (IIRC) 14. This makes them naturally better at completing objectives. The medical research slant is shown in their numerous Doctors. Other factions, with a couple of exceptions, tend to have a dedicated Doctor unit, then Paramedics (who aren't as good at doctoring) mixed through combat units. Haqqislam has dedicated Doctors mixed through combat units. Added to this they are all Doctor Plus, giving them a +3 to all Doctor rolls, and one is an Akbar Doctor, which gets an extra ability to revive multiwound models to full health. Their background also has the Hassassin sect, based on the ancient Hassassins from Middle Eastern history. These units can be fielded, and are very specialised at various methods of combat. An upcoming set of units for the faction will be super soldiers created through their medical research, to add to the medical research angle.

Here is my (and many others) advice: Go for the looks. Like seriously, choose on the basis of the aesthetic. Every faction have 1-3 sectorial armies at the moment with about 2 more on the way. At this amount of models and profiles wthin every army, you can basically go with every playstyle you want. Sure, some have more options than the others, but still, what pleases your eyes the most, will give you the best time during play.
Yu-jing was my choice and after a few years I still have a blast every time I play. And in this one facton a I can make sneaky, sneaky camo list (Guilang, Ninjas, almighty Dao-fei), crazy horde (Kuang shi, Monks, Keisotsu ), elite alpha strike (Oniwaban, Aragotos, Kitsune), brutal in your face assault (Domaru, Haramaki, Su-jian) or heavy metal heavy list (Invincibles, Gujia). And every one of them is viable, and will do just fine on the table.
