What models do you own to change things up? I think I got a good handle on what units are competitive and have enough to make some good lists at 1500-1850 but I would like to add more. help me with my shopping list/things I could add that's useful. Heres what I have today.
Draigo
A capt
A libby
about 25 terminators/paladins one with apothecary set up
10 Interceptors
10 Purifiers
2 Dreadkinights
1 dreadnought
A rhino
and two storm ravens.
Another dreadKnight maybe two and another libby is on my list to get but not sure what else, maybe more terminators for different weapons load out? Thanks for your help filling in anything I'm missing!

There's really no benefit to adding more to your GK army, unless you're just collecting. In which case, open your codex, and buy things you don't already have: any of the special characters, some strike squads, a land raider, etc.
My advice is to add allies to change things up. Start a small IG army. Add some Inquisitorial support. Try some of the SM formations.

Check out the Militarium Tempestus for flavour. They're essentially Inquisitorial Stormtroopers and can help out your army with some Vendettas and hotshot weapons.

A good core GK collection is Draigo, at least one Librarian, 30 TDA, 20 PA, 2 NDK, and a Stormraven. From that, you can field just about any combination of good GK units. More NDKs are good, although another Stormraven is dependent on your local meta. Personally, two Land Raiders are still good to own, but local meta might not make them playable in every game. I'd only recommend Rhinos and Razors if you want to play PA heavy.

Buy a Cullexus assassin, never expect to cast a single power, kill people with negative mind-bullets.

At 1500pts pure GK is the way to go either casual or competitive, and you've got all the models you already need.
At >1500pts if you play in more competitive environments you might want to think about another couple of Dreadknights to run double NSF, Allied Centurions or an Allied Imperial Knight

You've hit upon the main drawback of the GK current dex - lack of options. You can't go much beyond what you've mentioned, look to allies.

I would actually get another Librarian, or 2.
The real strength of the codex is just how many psychic powers you can get on the field. I regularly run 2 librarians and a Grand Master for a total of 8 mastery levels(and 9 powers) between them.
Aside from that, maybe get some allies. Imperial Knights complement Grey Knights quite well actually.

I second that.. currently I run two knights in my 2000 point list.

Well clearly the best thing in the codex is probably DreadKnights for the cost, while Paladins allow the most broken combination the codex offers. Between those two things, I don't think you're missing much.
I would most definitely try a Culexus assassin though. I find them to be useful for any Inquisitorial force. The one force that can cchallenge a Grey Knight forces shenanigans is one good at Psyker powers,. So nerfin that weakness seems wise.
