What consuls have people used? I really like the idea of some of them and am wondering how they've worked for people?

Every console has a use in every army (barring mortats in Salamander lists) There really is no "best" it all depends on what you want to do.
Personally, I frequently use: Forge Lords, Chaplains, Champions, Librarians (Woo TS!), MoS, Mortats, Medicaes, and Siege Breakers
The only ones I don't use are: Delegatus (I don't need a discount praetor, If I played more 1500 point games, I would), Praevians (I would if I had more ad mec. models  ), and the Vigilator ( I want to use him, but It wouldn't feel right to use him without at least a few recon squads)

Siege Breaker makes a great low point game warlord if you are using something with heavy weapons like Tyrants. Primus medicae is excellent for Night Lords in helping to protect your expensive Night Raptors and possible commander with them. Moritats are just plain fun to use. Two serpentia and a jump pack and send him flying towards something.

If you dont short hand your list, Im not reading it.
Example: Assault Intercessors- x5 -Thunder hammer and plasma pistol on sgt.
or Assault Terminators 3xTH/SS, 2xLCs
For the love of God, GW, get rid of reroll mechanics. ALL OF THEM! |

Are Recon Squads not worth taking or something? I'm not very experienced in 30k games

They are good (just like basically every option in 30k lists) They just don't fit the fluff for my Death Guard or Thousand Sons.

Champion - the close combat beatstick
Chaplain - the one that reinforces your other close combat beatsticks
Medicae - fixes your guys
Forge Lord - fixes your tanks
Signals - the one with friends in orbit
Librarian - the one with friends in the warp
I don't use any others. I find myself (and other players I play against) most often using Medicae, Signals and Champions. There's the odd smattering of Chaplains and Librarians with a Word Bearers player, but that's what we see.
I like the Champion and Master of Signals best.

Master of signals - he never fails to disappoint.
edit: new favourite is the primus medicae for being an apothecary in artificer armour with two wounds and not using up an elites slot.

In my admittedly very limited experience.......
Librarian with Divination is an absolute gift for a plasma equipped squad. The re-rolls for everyone also turns units like basic terminators into efficient combat monsters and can help Primarchs with no re-rolls fight back against the dice gods.
Siege-Breakers are nice but expensive and I can normally get effective Anti-Tank from non-Infantry choices so spending those points unless its super-thematic is a hard call to make.
Praevians and their metal brethren get awfully expensive awfully fast. The shooting is nice but as as an Iron Warriors player I already have AP3 in spades thanks to Siege Tyrants and I've been quite underwhelmed by the Castellax's clost combat ability.
Vigilator is gloriously cheap, can fill a compulsory HQ slot if I've got the rules right and offers some good special rules for every occasion. My personal favourite so far is joining an Artificer Armour equipped Vigilator to a Quad Mortar battery to tank with the 2+ at T7 and dumping any AP2 onto to the squad to save with 3+ cover saves. Which was all fun and games till the Mhara Gal tore them to pieces
