Hi there.
I recently dug out my old Imperial Guard Codex from late 3rd Edition (you know, the one with the Sergeant on the front who looks like he's firing directly into the ground).
To be blunt, I love this codex. It's the one with all the doctrine and regimental specialist upgrades, exactly the kind of thematic setup that got me into 40K in the first place.
So it got me thinking, and chatting to a buddy who I believe is just as disillusioned with modern 40K as me. We were thinking... what if we wrote 3rd Ed army lists and just used them with 7th Ed rules? It seems way more balanced, looking at the stat-lines and points costs. This may be rose-tinted on my part, as I think this was when IG were pretty bad-ass and damn hard to beat.
I do have a slight rules caveat, if me and buddy go ahead and try this. I despise the "whole squad must shoot at same target" rule. Completely unrealistic. So, we're going to play 7th Ed, but with free reign to shoot different profiled weapons within a squad at different targets.
So, has anyone tried anything like this? Any advice? Where we meet rules clashes between 3rd Ed stats and 7th Ed rules, I figure we'll just make it up. Simples, and hopefully bringing some joy and balance back to our 40K games.

I see no reason why this shouldnt work, especially since you are both using 3e/4e Codexes/

There might be a problem with vehicles. Hull points are a 6th ed thing.

I don't imagine we've lost any vehicles. since 3.5 should be simple eneugh to figure out

Classic IG is gigglingly easy to use in 7th as they don't get a single thing which was drastically affected by any rules changes with, of course, the exception of vehicle hull points. So long as a power axe is a power axe and so forth you'll probably be fine - though there is a potential issue with the Sentinel armed with a close combat weapon.
The biggest stretch is 3.5 chaos as there are so many adaptations you need to make, but it's been my experience that it's worth it.

Every edition had issues. But for the most part, things are forward compatible. And if it’s just you and a friend, you can just hash out any details.
Pychers might be an issue, I forget the system they were using at the time. IIRC SM librarians just got “smite” as an attack and nothing else back then.

They had more but they had to pat for Powers, like they were fancy guns.
