Okay... I got a deal on all Three Seasons of the Zombicide game and now I am looking to play my first game with my group.
I would love to throw in everything and the kitchen sink but don't want to get bogged down with the rules.
What rules issue should I look out for... ??
What mission should I run for the first game with all new players?

My group has played Zombies !!! and was thinking of playing the mission from the 3rd season where the survivors are trying
to make it to the helicopter.

I own all of Zombicide, excluding the main season 2 box, Prison Outbreak, as well and I would recommend sticking to the season 1 rules for a few missions. Let players pick any characters they want, but stick to the zombie types and weapons of season 1. Once you get a hang of the flow of the game, you can start adding zombie types and weapons from later seasons and then add the special rules from later seasons, like coming back as a zombie if your character dies or PVP from Angry Neighbors expansion.

Now some of early Zombicide is broken or fiddly and I haven't gotten too deep into season 3, but as the host, it might do you some good to read up on the rules before the game and then skim the books for season 2 and 3. If you see anything that fixes early rules and makes things faster/better I would incorporate that too. Have fun and house rule anything that doesn't work or slows you down more than you like.

Edit: One last thing. Not sure if your purchase included any Kickstarter extras, but when I Slacker Backer'd Season 3, I got Experience Cards in the deal. This deck allows you to sort of customize your characters as you level up so you can retain some persistence between missions and not always start back at level 1 as per the rules. If you got those and plan on playing multiple missions with the same people, I would incorporate that so you reward your players with using the same characters to specing in a certain direction.

The base games are easy enough that it doesn't really matter where you start.

I would agree. As long as you are using the up to date Zombicide rules (and not for example the first edition Kickstarter rules! ) then it is pretty straight forward in all the expansions.

What fantasy flight card sleeve color does it use...
Some people say yellow and other say red

The "zombie split" rule is stupid, we don't use it. We divide zombies along paths as equally as we can, and roll a die for odd numbers of zombies in cases where the distance is the same via either path.

Also, we allow shooting into a space with another player; you only hit players with any dice that miss a zombie - not automatically hit players.

It never ends well

I use a confirmed critical miss (a roll of 1 followed by a roll of 1) for survivor on survivor shooting. Even then far too many survivors have been killed by friendly fire

One notable kill happened as we were escaping the board and one friend fired a sawn off into a square with our 2 best equipped and XP'd players, each with a single wound... a pair of 1's followed by another pair of 1's... then a 2 and a 5 to assign wounds between characters

We still don't allow this friend to fire into survivor squares to this day
