For example, you can buy a set of 10 Tac Marines, Devs, Assault Marines, Terminator Squads, and they usually come with transfers that make them into any of the more well known Space Marine chapters. Dark Angels, Blood Angels, Salamanders, White Scars, Black Templars, Crimson Fists, Imperial Fists, etc. But, can you do the same for Grey Knights at all or do they have specific models that have to be used?

Grey knights have specific kits. Its there kit.
Weapons and gear, mostly unique. Great swords, deamon hammer, twin blades and halbards.
Have own termy, dread and power armour with above normaly.
Half or more of weaponry is not in codex marines.

The vehicles are the same, the infantry models aren't. I wouldn't recommend trying to pass normal Marine infantry off as Grey Knights.

No way. Anyway, standard kit short all the force weapons.
Basics, you could not even model a full sqaud.
Two desings are two handed, built in bolter on wrist.
Sword and halbard
One is duel sword with wrist bolter
All would be very hard to build minus there kit. Sorry.

To add to what has already been said, thegrey knight torso back piece includes a psychic hood, which tac marines don't have.

While you can't make a WYSIWYG unit of Grey Knights out of the standard Marine infantry boxes, if you had spare Force Weapon/Storm Bolter arms from the Knights' kit, then you could use standard Marine legs/torso/backpacks/heads to represent different [more commonplace] armour marks.
