So i'm looking to start playing 40k again and wanted to use kill team to get back to enjoying the hobby, I've got a fully painted Greyknights army that I used the Scribor Roman models for to make the army Adeptus Custodes so figured I'd use them since I lost interest in the hobby shortly after completing the army, that being said it looks like Greyknights arent so hot in kill team, I'm not at all concerned about winning many games or doing well in the campaign im going to jump into but also not really looking to get my face smashed every game....how much of a challenge should I expect trying to playing Greyknights?

Well the annoying thing is that the iconic "small team of Grey Knights sent to kill stuff" (aka kill team) is the 5-man GK Terminator squad (or Paladins in the new fluff), which can't be used in Kill Team games because of their 2+ save. So you're stuck with the PA guys, of which only Interceptors have the mobility to be really useful. Sadly, a lot of the psychic stuff doesn't work that great in the KT environment as well.
That said, KT is a pretty "casual" format (more or less, all things considered) so take what you want and just roll with it. Just don't expect to be much more than expensive Tac or Assault Marines with funky wargear, since all the really cool GK toys aren't allowed.

Well you could do Purifiers and grab Psycannons, make one of them Relentless and the other gain more range.
I guess that's something neat.

Grey Knights are, unfortunately, terrible in Kill Team. We're paying masses of points for toys we can barely make use of in normal 40k (Force Weapons, ML1), taking things away without dropping the cost is just making the issue worse. If you really must I'd suggest a Purgator team and a Rhino, and pray that density of psycannons does something before you explode into a bloody mist.

Give 1 Psycannon Relentless and another Reaping volley (for split fire). I would not spend anything else on ranged weapons. You have to take Purifiers to do this (Purgator squads are Heavy and cannot be in KT)
If you can get 7 w/ 2 Psycannons + a Rhino, do it, but if not drop the Rhino. You need bodies.

Just remember that none of them are Psykers.

This is true. Purifiers also have the upside of getting double the Attacks with the AP3 weapon someone decided we needed to be forced to buy on all our one-Attack models.
A Rhino is actually slightly more cost-effective as 'more bodies' than more Grey Knights; with an extra storm bolter it's 40pts and gives you three 'wounds' that are harder to knock off than a GK's without decreasing the amount of firepower you get out of it per point, and giving your psycannons ablative wounds while it's at it.

Hey, Fair enough
Can you get 6 Purifiers w/ 2 Psycannons and a Rhino? Cuz that would be a decent list. Put some Halberds if you have any points left over.

Five, two psycannons, and a Rhino, with 15pts left over for halberds/falchions/vehicle upgrades. You could do six, one psycannon, and the Rhino, but then you've got 6pts left.

With Psycannons being Salvo and only 1 can have Relentless in KT, maybe only 1 is enough
So you can do 6 Purifiers with 1 Psycannon, 3 Halberds and a Rhino. You could give Killer Instinct to a model without a Halberd, maybe Murderous blows to another. That would give all the CC purifiers a really good chance of killing anything they get into CC with.

That's not enough though. One can easily get Spitfire and camp or get the one to add 12" so that it doesn't have to move.
You want that extra Psycannon, not another model.

Indeed, GK are too expensive in a kill team.
I'd go for vanilla Marines.
In small pt games you need numbers in the first place.

They suffer from the same problem that Death Watch do- high points density, low model count. In Kill Team, model count (bodies) > anything else. When an Ork player can bring 30 models for 180 points... yeah, good luck. Your five models can't chew through that many wounds and hope to win.
With that being said, Kill Team should be a pretty casual type of game, and there should definitely be some kind of narrative for your game. If you want to play Grey Knights, and your opponent wants to bring 30 Orks, then make a scenario around it. Make one of the Orks a "Weird Nob in Training", who can't control his powers yet, but the GK know how powerful he could be, so they must eliminate him at all costs. Every turn, have the Weird Nob roll a d6:
1: Overcome with pain, can't move, shoot, or assault
2-4: Some pretty lights, or fierce flickering images appear around the Weird Nob, and nothing else happens.
5: The Weird Nob can see the future! He may re-roll ONE of his dice this turn.
6: Suddenly able to tap into the WAAAGH! of the Orks, the Weird Nob manifests a Psychic Bolt, BS 2 Range 12" S equal to the number of Ork Models within 6" of the Weird Nob, AP 3 Heavy 1. He must target the closest enemy model. If no enemy models are in range, he must target the closest model.
The GK Player wins if they destroy the Weird Boy in Training. The Ork Player wins if the Weird Nob survives the game.

Indeed, a 3+ save is still only a 3+ save.
As said with five models you need good luck.

Spam interceptors, play defensively until last turn. I'd grab an incinerator and blow the rest in falchions. Play extremely defensively and only use your shunts to redeploy.
Your goal here is to split the enemy up, then use your rapid movement to overwhelm a flank. Also if it's an objective match, save a few shunts for late game objective nabbing. Also line of sight blocking terrain is your friend. Interceptors have a 24 inch charge threat bubble, abuse this. You. An charge them before they charge you.
