For a Chaos Chariot is there any significant advantage to either? Looks like Gorebeast gets Wounds on 3 and does 2 dmg as compared to Steeds that wound on 4 for 1 dmg. Is that worth it or negligible and is the choice mainly for model aesthetics?

Pick what you like the most and use the Counts As rule when playing.
Now, the Gorebeast really benefits a from Khorne and Nurgle marks, and the steed take advantage from Slaanesh. The Gorebeast hist a lot harder but the steed are faster.
Otherwise, build what you want, or even magnetize 'em if you want, and play it as you want.

The gorebeast hits harder, so good if you want to run down smaller units. The Chaos Chariot is faster, so good if you want to grab objectives or just get in the way and hold units up. Not that big of a difference though.
Compared to other the big stuff that seems to be what AoS is about; chariots don't hit that hard, so the speed may be more useful.

Good idea about the magnets. I like the look of the steeds but hard hitting is always good. I was looking in the General's Handbook to see if a Gorebeast was listed in units, was thinking maybe a free usable model out of it, but alas they are not listed other then with the chariot.

I know, those hroses are badasses, yet I don't see the problem to run the trusty "Counts as".
The Gorebeast are not individual models but they could just work as Spawns!

The horse models really are great! Can't wait to get the knights together as well. Yep, that's exactly what I was thinking is it could make a good stand in for different things and still be more with the theme overall then a paint bottle or pop can.
Used as a spawn is a great idea. I often use my possessed in 40k for different things, including chaos spawn.

Using one model units to hold objectives is a terrible idea, no matter the amount of wounds they have. You have virtually no control then.

I am thinking of doing a conversion on it somehow. Probably as some kind of mount. I'll fabricate some kind of brackets and seat up for his back then figure out what/who to mount on it.
Time to consult the army lists to see who is avail with a mount and see who would work and look best with it.

Grab =/= hold. You don't need speed to hold ground, it's handy to get to that objective late in the game though.

In the games I've played involving chariots, they tend to be a unit that draws a lot of attacks so i've found that the gorebeast tends to survive a bit longer.

Indeed, the Gorebeast does a nice job of being a Distraction Carnifex. It's 100 points for 8 wounds with a decent save that has the potential to dish out some real pain if you manage to roll high on your charge.

Aah good call on the extra HP. Also looks like on the Gorebeast specialty attacks it wounds on a 3+ for 2 DMG, compared to hitting on 4+ for 1 wound by the steeds. Not a huge deal but every little bit helps.
