From a hobby perspective, any helmet you want to use is fine. Nothing about the job requires a specific mark of armor.

There was an early metal Ravenwing apothecary model that was a beakie circa 1991. The modern model is a loose homage to that original.

There have been a few versions. Most have standard helmets, since for most of the time, standard helmets have been what almost all marines have. It's only recently that they've been showing more variety.

Any helmet with some fancy lenses is cool for an apothecary.
Throw in MK3 and MK4 heads in there for extra flavour.

I kinda like the painting guide that supplemented the beakie marines, where it was pretty much paint the model white and it is an apothecary.
