I just got some Adeptus titanicus knights and I'm wondering if anyone knows 1. how poseable they are, like if it's relatively easy to repose them to be running, firing up at a titan, etc. 2. how to acquire more thermal and battle cannons because I don't want to use avenger gatling cannons.

Reasonably easy. Legs tend to be single pieces, but I've cut them around the knees for posing just fine.

All AT models are basicly monopose in either standstill, walking or running stand. For any sort of "cinematic pose" you have to bring out the cutter and greenstuff.
The two knights plus warhound has fixed running leg position, the titans do not, but too mutch "movment" on their legs will prevent leg/feet armor to be lined up/placed correctly. Titans out of the box are basicly ment to be in a stand still pose.
For their arms the "elbow" is fixed on all models, and there is not mutch you can do about the torso/groin joint but sideways rotation.
Their weps are not sold seperatly so your only option is bits hunting or buy more knights.

Questor and Cerastus Knights' waists, ankles and shoulders are all limited ball joints, so there is limited freedom to twist up/sideways, likewise the heads can pivot to either side to show the knight "looking in a direction". The upward swing of the shoulders is only restricted by the carapace, but weapons can be modelled pointing high towards a Titan.
Anything else will require cutting joints and patching them up.
Warhounds have a fair degree of movement: knees are fixed but there are multiple leg choices which aren't limited by armour plates.
Reavers and Warlords have a lot of movement in their "skeletons", but the armour plates won't fit properly if you model anything more than a slight step forward.

Casting additional copies with blue stuff and milliput would be very useful here. If detail isn't too much of a concern, you could do some plasticard modelling.
Or perhaps both.

685 points, includes sinistramanus tenebrae and a power claw. It's a 300 point upgrade over a normal Warlord.

Yes, but funnily enough RAW you have to pay full price for it (ie. the 25 points of fist aren't given back). Whether oversight or intentional, no-one knows.
