From various books I seem to remember that their blood is thick and green because of the fact they are basically living fungus.
This may be incorrect as it was a while since I read it.

Ork blood is part of their digestive system. It flows around the body beneath the skin, which is too thick to reflect the colour beneath. Most Orks have two hearts, though one of them doubles as a digestive organ. Food is digested and broken down by a series of outer stomachs (which is why Orks can eat so many apparently inedible things). Nutrients pass into the blood in the heart-stomach. The thickness and colour of the blood constantly varies according to what and when the Ork last ate, changing from black, to purple, and dark red.

Internal organs characteristic of 'simple/robust' paradigm: large multiple chambered stomach analogue feeds crude renal system. Bodily cavities filled with fungal 'soup'. (Spec: functions of biochemical organs (liver, kidney, spleen, pancreas, etc) fulfilled by internal enzyme).

Xenology page forty

This earlier information is supported by the more recent Xenology and the 5th Ed. Codex is largely a re-print of the earlier background so I don't see why Orks won't still function in this way. Orks are an animal, fungal and algal mix. The fungal/algal part colours the skin green but the blood is generally red but can vary in tone anywhere from black to dark red as mentioned above.

There are actually quite a few examples of animals with red blood and completely different-colored gums (and other fleshy bits).

mabye 3 or 4 times ive seen it referenced in bl books and they always say red, off the top of my head theres flight of the eisenstein i think it is, when theyre getting ready for the jorgall ship and wondering what color this xenos breeds blood will be and they mention red for orks.

We have light pink to black skin, our blood is red.

In the SW novel ragnar's claw ork blood was discribed as being yellow-green.

I'd be inclined to say its a green-ish color. In reading the background in the Ork codex, it says something about strains of the fungus they grow from being in their blood stream, so that when they inevitably get shot down (or in my case, burned alive by heavy flamers....), the fungus will get picked up by the wind and start to grow somewhere safer.

as for the red gums, its cancer from all the cigars....

Ork codex says red. They're green cause of fungal growths directly beneath the skin.

Read my earlier post, Orks have a fungal component but this is combined with animal genes. In Xenology it mentions primate as the possible animal part and earlier background had it as marsupial.

They used to be. Orks used to have marsupial pouches and old orks would wander off to give birth to a yoof. Now they reproduce by spores but orks are still mainly animal with fungal micro-organisms in their bodies.
