I was toying w/ the idea of running a 10 man squad w/ plasma pistol and flamer and Sgt w/ plasma pistol and power sword. Then attaching a priest with a power sword.
It weighs in at 240 without the priest... Not too far from the 5th edition 2 melta and sgt with a pf weighing in at 235...
Any thoughts of this load out? I know I will have to play test but was curious on dakkas feedback.

Plasma pistols are pretty poor considering you're only going to fire it once or twice.
I'd add another flamer and if possible take combi-flamers on the Sgt and Priest (I forget if they can). Even if you come across MEQ a lot, that squad will be able to put the hurt on them just with number of hits.

My typical loadout is melta flamer priest w/ plasma pistol.. I'm not a huge fan of tooled units because they aren't very transparent and are avoidable.
I am however, a big fan of forcing saves. I usually run 2 flamers in my backpack assault squad that drop pods in.

If your against marine or grey knights then plasma pistol + power weapon and meltaguns so you can hurt 2+ saves and allow a squad to take on terminators.
Againts hordes take a flamer and melta gun (for armour/monstorous creatures) and possibly a combi flamer and don't worry about a decent combat weapon for the leader.

I can't stand mixing weapons. It guarantees that you'll waste shooting depending on the target, especially when the options are aimed at incredibly different targets.

This is true, but you also need to make sure you can deal with what the squad is faced with or at least blunt the damage. It would suck if you needed flamers but are faced with 2+ armor and your melta pack is on the other side of the field. Versatility is a nice thing to have. I'm not saying your wrong for specialized units, but thats what they are, specialized.

Each specialisation will have a back up, or if I've designed the list correctly, it'll have 2 back ups. It's important to use multi-role units. Not "generalised" units like OP is using, but for example a manticore: can deal with high armor or with hordes. A vendetta can deal with armor or fliers. A flamer assault squad can deal with infantry very well. I mean, 4 flamers will really put the hurt on MEQ, whilst also being able to handle hordes very effectively. Similarly, a melta spamming assault squad can hurt MEQ, TEQ, MCs and AV well. Both are examples of multi-role specialists, whereas flamer and plasma will be mediocre at everything, which is not points efficient.

Spamming is the way to go, since a given squad must all shoot the same target. With jump packs, you should be able to get the specialized squads to the appropriate targets.
