Not sure what you'd count as "choral", but both "Baba Yetu" and "Sogno di Volare" (both by Christopher Tin) are up there, IMO.
Ultimately though I'd be amiss not to mention "I vow to thee", as it's based on my favourite piece of music (Holst's "Jupiter"). Yeah yeah, it's a hymn, close enough.

Epica has some, but they also have other songs sung by individual singers as well. They get a little operatic too sometimes, which may or may not be a good thing..
I believe Nox Arcana has some too, but I'm less familiar with their works. I'm not exactly a metalhead.
A lot of Soviet-style music is also perfectly fitting. The Soviets were rather fond of epic song. Turn up the volume and sing along comrades!
Latin and Orthodox church hymns are also very suitable. Considering the Imperium is a theocracy, I imagine most Imperial music would be religious in nature:
Judging from posts above this may not suit your particular taste, but for me personally this one is THE ultimate choir piece. Listen ONLY on good headphones as binaurality plays a huge role, and listen through because it builds up momentum up to a culmination at at 12min mark.
Equally spectacular and probably more to taste of wargaming players are those two entire spectacles by "Song of a Goat" theater" - "Songs of Lear" and "Island". There are only two trailers on YT, but there are recordings of those available on CD. They're definitely worth it. I saw both live and those were the most intense theatrical experiences in my life (without a bit of exaggeration I've nearly fainted during the "Island" culmination scene).
Third is a composer, not a single piece, simply because there is too many great works by Arvo Part to just suggest one. But you can start your adventure with his works here:
If you like those styles then you may want to dig deeper into Baltic area composers, many of their works are stunning.
Dakka does have White Knights and is also rather infamous for it's Black Knights. A new edition brings out the passionate and not all of them are good at expressing themselves in written form. There have been plenty of hysterical responses from both sides so far. So we descend into pointless bickering with neither side listening to each other. So posting here becomes more masturbation than conversation.
