I'm new to Warhammer 40k. For my very first army I have chosen to go with the grey knights, but I'm really stuck in what colour I should paint them in. I don't really want to go with the silver. Anyone got any ideas.

Non-metallic metal grey always looks good.
Or White. Although it can be hard to pull off white.
You can do an Exorcists army, who were a descendant chapter of the GKs.

Thanks for the ideas so far. I really like the idea of the white. But its a hard paint to use (time consuming). Any tips on how I might be able to acheave a good Finnish on them using a white

Go for dirty white? And just paint light grey, highlight to white and then wash with black.

White is definitely not as hard as you'd think it might be...provided you start from a white or light grey primed base.
From there, it's a matter of making your own washes(black washes or muddy washes, etc tend to come off as too strong) using a drop of dish soap, four or five drops of water and a light blue-grey color like Fenris or Shadow Grey and cleaning up the white primed with multiple thin layers of white.
