The IOB griffin is a cheap place to start, true. However, the legs and torso of the High Elf rider are moulded onto the griffin and will need to be removed first, and the area underneath resculpted. That will be a significant challege for one with no experience. A better start might be a griffin without a rider, or with a rider cast separately from the mount.
If you do get a useable griffin, a good rider might come from the Dwarf Bear Cavalry minis I keep seeing around the site. I wish I knew who the manufacturer was so I could tell you.

Or see if you can pick up one of the old metal griffons. I think they all had totally separate riders. They tend to be poorly fitting, so some gap filling is usually needed, but thats a good introduction to using GS ayway

King Leoncoeur's mount is technically a hippogriff (half eagle, half horse), not a griffin (half eagle, half lion). I've also heard it is a bit of a pain to assemble. But far be it from me to discourage what could be an epic conversion!
