The new recommendation for whole cuts of unground pork is 145°F (63°C) as measured with an accurate food thermometer placed in the thickest part of the meat, then allowing the meat to rest for three minutes before carving or consuming.

So now they have seen the light of my ways. I always hated when people would serve me dry tasteless pork chops or loin. Shoeleather drowned in sauce, give me a inch and a half chop and just a little salt and pepper, pig is good!

Yep, you don't have to cook pork to death anymore. Convincing some people of this is difficult, at times.

A Dakka cookbook is an intriguing idea. Perhaps during my summer break we can do it as an article or something.

Works for me.... though some things are done more by "feel" than timing.

Well sure.

You can still give people guidelines though. Or explain to them what it is exactly that you're "feeling." There's the old thumb trick when you're cooking steaks, for example.

OH.. they were good too! Taste just like chicken! Bit of my favorite BBQ rub, add a little garlic powder & sea salt. Finish with a healthy slathering of honey/chipotle BBQ sauce. All the spices were commercial mixes... but very tasty none-the-less.

Been watching too much Man V's Food, and Diners Drive ins and Dives. Need to visit US and their many BBQ joints.

Although Aurelia did a lovely bacon melt thingy today for my fathers Day breakfast, using the water under a lid technique done in a few of those US places. Cheese was awesome and melted all across the bacon. Yum.

You cook it really fast and pay attention to it, it's easy to burn pretty much all seafood. If it's something breakable like fish, you want to be sure that the grill has a lot of oil so it doesn't stick, and you're still likely to have trouble unless you use a fish grill basket.

Grilling seafood isn't all that much different from grilling any meat, and aside from cook time and the fact that some fish will "break apart" or stick to the grill , I don't change up "how" I grill all that much.
Make sure your grilling surface is clean and well oiled to prevent sticking, and that your cooking on a hot surface to sear the fish, also a grill basket can help with more "flaky" types of fish.

As for "not putting things" on your fish...O use all sorts of marinades and sauces...so I've never had any problem with adding stuff as I grill.

With fish you want to make sure you don't over cook though, a good rule of thumb is ten minutes on the grill for each inch of thickness of the fish...though this is only a guide.

If your a novice at grilling fish, I suggest starting with something easy, like Tuna or swordfish before trying any "trickier" fish, a lemon and oil/herb marinade on tuna steaks , quick sear and grill ( 10-12 minutes or so) and your good, serve it with some grilled vegies and rice .

UGH.... roomie made some ribs..... only cooked them for 2 hours in the smoker..... cooked but not tender just.... still fatty and kinda like jerky.

I cooked some chicken quarters for my family and my giant brothers family. They turned out really well, and best of all I nailed the skin, it was awesome. I too am more of a "feel & sight" cook rather then precision but yea, a DAKKA cookbook would be pretty cool. After that we could do a DAKKA calender and have a member posing for each month

I had actually planned to grill some steaks today, but was surprised by my Missus Mother with a invite for a late lunch for Fathers day....so..I suppose I'll either be doing some late night grilling or just do them tomorrow.
