If the Daemons of Chaos are acting as defenders in Planetstrike, do they still deploy via deepstrike (as they do normally), or do they begin the game on the table, hunkered down in their nasty little bastions of blood and bone?

I'd discuss it as a pair of players, in theory codex beats rule book.
Both ways could be fin, grey knights attacking a daemonic bastion would likely have some there.
On the other hand, guard returning in force to investigate an outpost which had been attacked (and being a little heavy handed) would probably have the daemons start in the warp

I havent read the PS book but the Deamon codex lists the demonic assault is always in effect regardless of mission.

I havn't read Planetstrike either, but I'd agree beforehand what's gonna happen.
1 - Grey Knights could land on a planet only to be surrounded by warping daemons
2 - Daemon world. In which case, the attacker would be assaulting a daemonic fortress. This could lend itself to some cool defense structures like living forests, or other changing terrain.
Remember daemons are smarter than just salivating beasts, they can scheme as well.

Hmmm. I have read Planetstrike, and I don't recall reading a rule that would override the daemons' ability to deepstrike in their deployment...I am just not sure they'd ever be viable defenders by doing so.

I'd say yes, the Daemons must be summoned in. Which is just stupid. "Quick men! There's a completely abandoned defensive line there, commence the firestorm!" "But it's empt..." "Commence the firestorm!" "Yes sir." *firestorm happens* "Now! Charge in and we'll take this unmanned and undefended stronghold from... well... from no one!" "Yes sir!" *they attack* "We're winning sir. There's no one to HOLY FETH DAEMON!!!!!!" *attackers die* *later* "Oh Lord Khorne, it is I, Kras'rtha'sfahda, the Herald of Hatred. You'll never believe what happened today. We just warped in 'cause we felt like it and wow, there was this force of humans! What are the chances!!!!"

Did GW see this coming? This really shows their tried and tested method of playtesting.
"Right space marines as attackers"
"Sounds fair"
"Space marines as defenders"
"All good"

One of the mistakes so often made here and on other sites is the question "Didn't they see that?" (or some variation of that). The thing is, it's never a case of whether they knew the rule did that, or whether they came across it in playtesting. The actual question that we should be asking is:
Does GW even care if this is a problem?
The answer is always a resounding 'no', unfortunately.

I was pretty sure that daemons were like dark eldar and when missions came t choose the Daemon Host was always the attacker and never the defender.
I may have been thinking of an earlier codex though.
I know Dark Eldar have that choice.

The Dark Eldar codex says that they will always be the attacker in a scenario involving an attacker and a defender. Codex supercedes BRB, etc.
However, Planetstrike is a codex/modification/etc and not the BRB. In planetstrike, it SPECIFICALLY addresses this issue; how races that would not normally be defenders may allowed to be so, and they even give several justifications for why daemons or Dark eldar would be acting in defense in particular scenarios.
At the end of the day though, its a game...and you and your opponent should discuss what is most fun for both of you, and then do it.
