I generally despise this genre but a good anime I've run across would be 'Princess Mononoke' - a relatively trippy and entertaining move. However I was pretty stoned at the time.
Ghost in the shell, Wolf's Rain and Evangelion - beware with this, it's nice and easy going for most and then suddenely you're like huh? Wha...? I don't get it

Kannazuki no Miko: ( one of the best ending to animes )
Not to mention very high lvl attention to detail drawing emotion / reactions between the 2 main chars
(if it wasnt for the weird first 6 episode, this would easily be one of the best animes)
pandora hearts- its weird, its gotta lot of alice in wonderland references going on, and you get to see a giant rabbot with a scythe kill a giant baby head walking around on spider legs
mushishi- its different, but cool
makanuchi no ippo-(probably spelled that wrong)- high school kid who becomes a boxer, lots of episodes out there
Trigun is good (haven't finished it yet though).
GTO is very good as well. My wife actually watched this one with me and she liked it.
Tenchi Muyo? I didn't think I would be interested in it, but I watched like 20+ episodes of the series.

The response of a true anime nerd. The original FMA (Not the OVA which moves too quickly and is far too kawaii for it's own good) actually was arguably one of the best anime ever made. It had a well written plot, concise character development, a believable and clever setting with real world parallels, excellent animation, and most importantly of all a level of maturity that is so terribly lacking in most anime.
