Elfen Lied , it have the potential to be even better imo.

Less frequent on " cute" and "nude" and it will be more of an impact when the story line actually needs it.
( which i think as far as anime go , they paced / proportioned it rather well )

Now returning to the topic...

Excell Saga was great, even the last episode which was one big "let's wing it" fest where they pushed it as far as they could go and got it banned from TV.

Looking at my shelf of dvds:
Ghost in the Shell: Stand Alone Complex, First and Second Gig. Great animation and great stories, though I feel the Second Gig wasn't nearly as good as the first.
Samurai 7: Anime/sci-fi version of the Seven Samurai. Pretty good series.
Gantz: I hate this series. Bad action, stupid aliens (scallion head aliens?), slow uninteresting dialogue that pops up in the middle of the fights as the characters agonize over their former lives and how crappy they were.
Ergo Proxy: Mankind is living in domed cites. The old "keepers" of the cities are starting to go crazy. Really liked this one. Excellent animation and though the last couple dvds (7 total) start to dip into the nihilistic philosophies that are rampant in anime, it still ends strongly.
Ah! My Goddess!: Fun light anime, excellent animation and pretty funny stories of a young man that gets a single wish from a goddess and his wish is they would always be together.
Full Metal Alchemist: Pretty good, but far too much angst and whining from the main characters for my liking. Anumation is great, and despite my previous negatve for whining, it's a good one.
Full Metal Panic: OK battle suit anime, alternating between battles and high school antics. My major complaint; if these guys are so hardcore, how come they fail at least three times in killing one terrorist? I mean they shoot the guy in the head at least twice and he still shows up like a bad penny.
Desert Punk: I got the first two dvds and didn't have any desire to get any more. Kinda funny anime, but the main character's lechery gets tiring. If you like fan service, this one has it.
Cowboy Bebop: Sci-fi bounty hunters. Great anime with the catchiest theme song ever. Love the animation, love the characters, love the stories.

Movies worth getting:
Akira: The first anime movie to really come to America. I had to take a bus ride for about an hour and a half to get to the theater that was playing it. I loved it so much I returned the next day to see it again.
Princess Mononoke: Others have mentioned this one, really good story and art.
