I've played 40k for about 7 years now and quite frankly, I've gotten somewhat sick of painting futuristic warriors. I have tried to solve this problem by looking at fantasy armies that look fun to paint, specifically, something more organic in general.
I have looked especially hard at Dwarves, their flesh, beards and robes look somewhat fun to paint. Their smal size kinda ruins me on bainting them.
Wood elves seem very fun to paint as well. I'm not too sure on how I would fair with their hit and run style tactics.
I havn't looked much at lizardmen, but I know I could do a better paintjob than GW's blue skinned warriors.
I'm also not sure on how Fantasy is played compared to 40k, the stats look simmilar, but somethings seem quite strange.

Many, many gamers have switched from 40k to WHFB for a more 'mature' gaming approach.
WHFB is much more complicated, whilst remaining pretty simple as psychology and magic are so important, compared to 40k.
Movement is king in the game and you need to be able to remember how far you have moved, how far the enemy have moved and if you charge, will they flee leaving you set up to be charged?
Rather than focusing on the painting (you can paint any army, any way you want) focus on the race which you like the background of and the one that will suit your gamestyle. For example, I love dwarven background but hate slow, camping armies, so I haven't played dwarves for 12 or so years.

This was the reason i don't want to go with dwarves. I would like a non-human race (as I play Guard and SM in 40k), and have looked at elves, lizardmen and orks as great and interesting armies.

So what kind of play-style are you looking for?

Dark Elves are a good one if you like the models, as they can do a variety of playstyles. Lizardmen are also good for that, but perhaps not as versitile.
Orcs aren't currently that great, but they might get better in the future and do have a lovely model range (for the most part). Plastic Boar Boyz are rumoured for 2010 though, so you might want to avoid the metal hybrids.

This is a hard question for me to answer because I'm not exactly sure on the mechanics of the game. I don't want a hoard army(like my guard) and I certainly don't wnat an army who are always outnumbered because they are "super hunams" (like space marines and the warhammer ogres. I hear that warrios of chaos are like that too).
I understand that I am a beginner and that I should probaly go with an army that is forgiving to new players. I figured the empire and bretons are good choices in this matter, from what I gather.

Bretonians are easy enough to learn, but again, not that forgiving really either.
The thing is, each army in fantasy has it's own niche, unlike 40K in a lot of ways.

I don't mean to be a pain, but could you (briefly) elaboborate on that point?
Lizardmen are generally very tough , and their cold blood rule makes them hard to fail LD checks ( hence forgiving )
Empire are humans , so they are sort of weak at everything
Bretonians are easy to learn because all they do is charge charge charge with their knights.

The point about each army having a niche?
Basically, it comes down to that unlike in 40K where you have some armies that play sort of similarly, in Fantasy you can have some big differences.
Empire: All rounders, but not exceptional at anything.
Orcs and Goblins: Sort of all rounders but skewed towards close combat, and not reliable.
Dwarves: Slow, Elite, Tough, Shooty.
High Elves: Mobile, defensive, fragile, magic.
Dark Elves: Mobile, Aggressive, Fragile, monsters.
Wood Elves: Mobile, shooty, aggressive, fragile, tricky.
Beastmen: Supermobile, close combat, horde, poor leadership.
Bretonians: Elite cavalry with cheap infantry, blitz.
Warriors of Chaos: Elite infantry/cavalry, close combat, no shooting.
Ogres: MSU of multiwound hard hitters (doesn't actually work too well though).
Undead: Cheap weak hordes, summoning more troops, powerful magic and heroes, entire army causes fear.
Lizards: Tough combat, good skirmish, magic and monsters.
Hope that made it a bit clearer, each army has a really distinct playstyle.

Magic is a seperate phase. For some armies it's REALLY important, others get by without much or by just getting some items to defend against enemy magic. Generally, it can be powerful, but also unreliable. I think Undead and Daemons do magic heavy the best but I might be wrong. Dwarves have no magic at all, but good magic defense.

Well, one of your Lord choices (the premium army leaders) is an awesome mage, who can get access to many different types of magic. So you can do all sorts of things with that. And one of your best hero choices is a priest riding a stegasaurus with an altar on it's back, who can provide protective buffs and blast stuff with lightning. Both can be really useful.

Lizardmen Skink priests drops comets o_o
and they can be mounted on Stegadon with Engine of the Gods ( you'll see this mentioned all the time by lizardmen players ) The engine offer buffs + spells that cannot be dispelled.
