So, I was wondering that if I was to strip some old models of mine, would then re-priming them white end horribly? It seems like it would, but I'm not quite sure.

I prime white all the time , and i just strip them down too bare metal or plastic and prime white still.. Its just how well you strip them down...

Just out of curiosity , what part of priming white would be horrible after stripping paint?

I use the P3 White Primer on all my stuff now. The only real difference between that and the black I used to use is number of coats. I usually have to do two light coats to get full coverage. But once its on, it covers over stripped models (even the ones with the stubborn bit of old black primer on them) very well.

Wash any thing stripped before you paint it using dish soap with degreaser
It also helps to paint a light dusting coat to tooth the paint
